The present disclosure provides a composition and method for promoting functional neuronal development in pediatric subjects. The composition comprises in some embodiments up to about 7 g/100 Kcal of a fat or lipid source; up to about 5 g/100 Kcal of a protein source; about 3 mg/100 Kcal to about 50 mg/100 Kcal of phosphatidylethanolamine; about 0.15 mg/100 Kcal to about 75 mg/100 Kcal of sphingomyelin; and about 5 mg/100 Kcal to about 75 mg/100 Kcal of docosahexaenoic acid. The methods comprise, in some embodiments, administering the aforementioned composition to a pediatric subject.

The present invention discloses processes for the preparation of phospholipid-enriched dairy products as nutraceuticals for the formulation of functional foods, the processes include the steps of: combining a non-dairy-based PL-containing material, having phosphatidylserine (PS) and/or phosphatidic acid (PA) in the PL-containing material, wherein the PS and/or PA is derived in part from an enzymatically-processed lecithin as a PS-calcium and/or -magnesium salt and/or a PA-calcium and/or-magnesium salt via transphosphatidylation with phospholipase D in the presence of L-serine and a calcium and/or magnesium salt, with water and an oil component to form a paste; removing an excess amount of the water from the paste to form a PL-oil solution; and mixing the PL-oil solution with a dairy component, thereby obtaining a PL-enriched dairy product. Alternatively, the PL-oil solution has a weight-to-weight (w-w) concentration of at least about 0.01% of a residual amount of the water to the PL-containing material.
Fatty Acid Composition And Method For Fortifying Nutritional Products With Fatty Acids
A fatty acid composition is provided which can be used to make fattyacid fortified nutritional products. In one embodiment, the fatty acid composition comprises a fatty acid component, inorganic salts (which can include a phosphate salt), vitamins, and optionally a protein source and optionally a carbohydrate source. The composition can further include additional nutrients and combinations thereof. In another embodiment, the fatty acid composition is only the fatty acid (i.e., consists of a sodium or potassium fatty acid) which is spray dried. In both embodiments, the fatty acid composition is not microencapsulated in a waxy or carbohydrate substrate, yet the powdered composition is flowable and is easily dispersible in a liquid to form a stable dispersion in the liquid by stirring or shaking the powder in the liquid for only a short period of time.
BREAST MILK STRUCTURED LIPID SIMULATING THE COMPOSITION OF TRIGLYCERIDES AND METHOD FOR PREPARING THE SAME
The present invention provides a breast milk structured lipid simulating the composition of triglycerides and the method for preparing the same. The breast milk structured lipid exhibits a similarity of over 90% to breast milk lipid, including the contents of less than 0.3 mg/kg of esterified propenyl glycerol, less than 0.5 mg/kg of chloropropanol esters, and less than 0.3 g/100 g of trans fatty acids. The final product of the present invention exhibits a composition highly similar to breast milk while also meeting the requirements of the national food safety standard GB30604-2015.

A food product of the milk biscuit type mainly constituted of milk ingredients having organoleptic qualities, in particular crunchiness and puffiness, of a biscuit, where the milk biscuit includes 30 to 60% by weight of the total weight of the milk biscuit of proteins, of which at least 80% is of milk origin, 12 to 45% by weight of the total weight of the milk biscuit of mono- and/or disaccharides, of which at least 60% by weight of said mono- and/or disaccharides is lactose, 1 to 40% by weight of the total weight of the milk biscuit of lipids; and less than 6% by weight of the total weight of the milk biscuit of water.

The present invention relates to a liquid milk fortifier composition for administration to infants, which fortifier composition comprises lipids in an amount of above 75% of the caloric content. The fortifier may be administrated to infants either as a supplement to human breast milk or to infant formulas. The present invention also relates to the use of the fortifier composition as well as a kit of parts for use in providing a lipid and/or calorie adapted body weight dependent nutrition to infants.

System and method for mixing polyunsaturated fatty acids into a fluid food product
An apparatus for distributing oil into fluid food product includes a batch tank, a transfer line, a pressure tank, a funnel, an oil dispenser, an inline shear mixer, and a flow line. The batch tank holds a volume of fluid food product. The transfer line is in fluid connection with the batch tank. The pressure tank holds a volume of oil. The funnel is disposed through a top opening in the pressure tank and dispenses oil into the pressure tank. A stem portion of the funnel extends at least halfway into an interior of the pressure tank. The funnel includes at least one vent. The oil dispenser dispenses oil from the pressure tank into a flow of fluid food product from the batch tank. The inline shear mixer mixes the fluid food product and the oil. The flow line flows the fluid food product-and-oil mixture to the batch tank.
