Apparatus for Shelling Eggs
The present invention relates to an apparatus (10) for shelling eggs which includes: a casing (11) defining a shelling compartment (A) and an unloading compartment (B); a shelling device (12) housed in the shelling compartment (A) and configured to open egg shells; an unloading device (13) housed in the unloading compartment (B) and comprising at least one hopper member (14a, 14b, 14c) suitable for receiving and unloading a shelling product consisting of albumen, yolk or a mixture of albumen and yolk; a transport device (15) comprising conveyors (16, 17) configured to separately transport albumen and yolk from the shelling device (12) to the unloading device (13); sanitizing devices (18, 19a, 19b, 20, 30) housed in the casing (11) and adapted to emit ultraviolet radiation and which comprise a first sanitizing device (18) positioned to irradiate operating surfaces of the at least one hopper member (14a, 14b, 14c), to reduce a bacterial load on said operating surfaces which are surfaces that come into contact with yolk and/or albumen during the operation of the apparatus (10).
DEVICE FOR OBTAINING EGG LIQUID
The present invention concerns a device for obtaining egg liquid from poultry eggs, comprising,an egg holder for fixedly holding and positioning such egg along its main axis substantially vertically,an egg opening device for decapitating such egg at both ends after having been positioned vertically, thereby having the liquid falling and flowing downwardly into at least one liquid collection reservoir arranged underneath the egg holder, anda control device for controlling positioning such egg and driving said opening device and said egg holder, whereas the invention also comprises a method for collecting egg liquid from poultry eggs, the method for each egg comprising the following subsequent steps,gripping the egg substantially at both sides of the egg parallel to its main axis, wherein the egg is positioned substantially vertically along its main axis,decapitating the egg at both ends, andblowing from above into such end to urge the liquid flowing and falling downwardly into at least one liquid collection reservoir. This device and method are designed for building a system for collecting egg liquid from poultry eggs. It has appeared that by applying this invention nice results are obtained in collecting egg liquid, giving very advantageous egg liquid processing parameters and suitable hygienics.

EDIBLE OIL-IN-WATER EMULSION COMPRISING EGG YOLK COMPONENTS
The invention relates to a method of producing an edible oil-in-water emulsion having a pH in the range of 3.0 to 5.0 and comprising 30-78 wt. % of oil, 65-20 wt. % water and 0.5-6 wt. % hen's egg yolk proteinaceous component by dry weight, said egg yolk proteinaceous component consisting of a combination of low-density lipoprotein (LDL), livetin, high-density lipoprotein (HDL), and phosvitin, and the method comprises the steps of: heating a liquid aqueous mixture comprising a first egg yolk plasma fraction to produce heat treated egg yolk plasma liquid; a. preparing a first pre-emulsion by combining oil, water, egg yolk granules fraction and optionally a second egg yolk plasma fraction; b. combining the heat treated egg yolk plasma liquid with the pre-emulsion to produce a second pre-emulsion; c. Adding one or more acidulants; and d. homogenizing the second pre-emulsion to obtain an oil-in-water emulsion;
wherein the egg yolk proteinaceous component of the oil-in-water emulsion has the following composition: 60-75 wt. % LDL; 8-14 wt. % livetin; 11-18 wt. % HDL; 2-5 wt. % phosvitin.
EMULSION COMPRISING RAPESEED PROTEIN ISOLATE
An emulsion comprising water, vegetable oil, and an emulsifying agent comprising at least 20 wt. % of soluble native rapeseed protein isolate comprising 40 to 65 wt. % cruciferins and 35 to 60 wt. % napins and having a solubility of at least 88% over a pH range from 3 to 10 at a temperature of 232 C.
METHOD FOR PROVIDING PROTEINACEOUS COMPOSITION
A protein-rich composition can be provided from egg albumen via a process that involves diafiltering with purified water an egg albumen concentrate. Collected retentate from the diafiltration step constitutes a protein-rich composition which, on a dry basis, can include less than 1% (w/w) lipids. The composition can be spray dried to a protein isolate solid which is substantially free of sugars.
