METHOD FOR PRODUCING A FIRM GEL FOOD BODY MADE OF PLANT PROTEINS, A GEL FOOD BODY, AND USE OF AN AGGREGATOR FOR CARRYING OUT THE METHOD
The invention relates to a method for producing a firm, in particular vegan, gel food body, preferably a gel food block, made of plant proteins, the method having the following steps: a) providing a composition consisting of or comprising an aqueous plant protein concentrate solution b) aggregating the composition in a pressure vessel (2) by heating the composition to a maximum temperature, then cooling the composition to a cool temperature below 100° C. and below the peak start temperature (7) c) performing the heating and cooling at a counterpressure in the pressure vessel (2), which counterpressure acts on the composition and is above normal atmospheric pressure, in such a way that the composition is prevented from boiling.
The invention also relates to a gel food body and to the use of an aggregator (1).
APPARATUS AND METHOD FOR PREPARING A FOOD MATERIAL
An apparatus for texturizing emulsified protein and/or carbohydrate containing food materials into a textured fibrous meat simulating product, said apparatus comprising a treatment assembly comprising: a first stationary disc having an inlet opening for receiving a food material slurry, a second stationary disc arranged underneath the first stationary disc with a predetermined distance between said first and second stationary discs defining a treatment space between the discs, wherein one or both of the first and second stationary discs are configured for being heated; and a rotary paddle wheel with spokes configured for rotating around a rotation axis, wherein the rotary paddle wheel is arranged between the first and second stationary discs for during rotation of the rotary paddle wheel transporting the slurry from the inlet opening to the periphery thereby heating and texturizing the slurry.

The present invention relates to a method for producing protein-containing foamed food products, comprising the steps: metering raw materials into an extruder, wherein at least one raw material is a protein, mixing the raw materials into the extruder to produce a mixture, extruding the mixture to produce an extrudate, and leading the extrudate out of the extruder through a cooling die with cooling of the extrudate to a temperature of less than 100° C., wherein pores are formed in a controlled manner in the extruder, by providing a gas, by introducing the gas into the extruder or by forming the gas based on a reaction of a gas-forming compound added as a raw material with a gas-releasing compound added as a raw material.

FUNCTIONAL YEAST PROTEIN CONCENTRATE
The present invention relates to a method for preparing a yeast protein concentrate, said method comprising the lysis of yeast cells in a suspension that was adjusted to a particular pH prior to lysis, subsequently subjecting the soluble fraction obtained from lysis to filtration to reduce the content of molecules smaller than 30 kDa, and optionally drying the solution obtained from filtration. The present invention further relates to a yeast protein concentrate obtainable by the method of the invention. The yeast protein concentrate comprises a high amount of proteins which are still folded and are therefore capable of aggregation to form a solid protein matrix upon heating. In addition, the yeast protein concentrate of the invention will be of unobtrusive taste and is therefore particularly suited for use in the preparation of food items, such as meat substitute products.

The present invention relates to a method for preparing a microbial cell product, said method comprising: providing an aqueous suspension comprising microbial cells; subjecting said suspension to mechanical cell disintegration at a temperature in the range of 15-35° C., preferably at a pH value in the range of 9-11, to obtain an aqueous suspension comprising disintegrated microbial cells; separating the suspension to provide an extract enriched in small cell fragments, and an extract enriched in large cell fragments; and combining at least a portion of each extract, to provide said microbial cell product. The invention further relates to a microbial cell product obtained or obtainable with said method. The invention further relates to the use of said product in foodstuffs, for example as a substitute for egg-white; in animal foodstuffs; and/or in cosmetic formulations.

The invention is directed broadly to a method of preparing a texture modified food product for consumption by a dysphagic consumer, comprising the steps: (a) providing a cooked fish or meat; (b) comminuting the cooked fish or meat to form a paste; and (c) forming the paste into the texture modified food product shaped and textured to a generic serve of the fish or meat selected to form the paste.
