Composition and method for manufacturing clear beverages comprising nanoemulsions with <i>Quillaja saponins</i>
A method of making a clear beverage concentrate, which contains a nanoemulsion of a liquid flavour oil in an aqueous phase, including the emulsification of the flavour oil into water in the presence of an emulsifier, which emulsifier consists of at least 5% by weight Quillaja saponins, optionally containing at least one other emulsifier, characterised in that, prior to emulsification, the pH of the aqueous phase is adjusted to 4.0 maximum. The method allows the preparation of beverages that not only are crystal-clear, but which also have substantially more of the full flavour of the original flavour oil.
Sweet potato leaf protein concentrates and methods for obtaining the same
Described herein is a concentrated sweet potato leaf protein in dried form, along with methods for producing it. The concentrated leaf protein has a protein content of greater than 21% by weight, and can have other beneficial components such as polyphenols. The concentrated leaf proteins are suitable for use in food and beverages, as protein supplementation, or as agents for gelling, foaming, and whipping.

STABLE, SPRAY-DRIED PARTICLES AND PROCESS FOR OBTAINING SAME
Stable spray-dried particles are provided. The stable spray-dried particles include a water-soluble matrix including from about 5% to about 30% emulsifier; from about 20% to about 75% filler; and from 20% to about 50% mono, di and trisaccharides, based on the total weight of the matrix; and at least one active component encapsulated in the matrix. The emulsifier is dextrin and the filler is potato maltodextrin.

COCOA POWDER FOR BEVERAGES AND METHODS OF PREPARING THE SAME
The present invention relates to methods for the preparation of cocoa- or chocolate-based beverages with excellent, rich taste, favorable organoleptic properties and high contents of nutritionally beneficial components, wherein the method comprises the steps of: a) adding water to cocoa beans or nibs to form a suspension; b) wet grinding said suspension; c) subjecting said suspension to a heat treatment at a temperature of 70° C. or less; d) separating the suspension into a water phase (heavy phase), a fat phase (light phase) and a solid phase, said fat phase comprising cocoa butter as a major component and solids and/or water as minor components and said solid phase comprising cocoa powder and water; e) separating at least cocoa powder from the solid phase, and a step of mixing the thus produced cocoa powder or chocolate products obtained therefrom with a water source to provide the cocoa- or chocolate-based beverage. In addition, related uses and products are disclosed, which include cocoa drinks, chocolate drinks and instant cocoa powder.
