METHODS AND APPARATUSES FOR TEMPERING ORGANIC PRODUCTS
20210251261 · 2021-08-19 ·

The invention relates to a method and apparatus of tempering an organic product in an enclosed structure using a liquid maintained at a predefined temperature. The method includes, introducing the organic product through at least one access means of the enclosed structure into the liquid, circulating the liquid from the enclosed structure through a heating unit and back into the enclosed structure to increase a temperature of the liquid up to a predefined temperature, and supplying a gaseous substance into the enclosed structure for a predefined time period based on a temperature of the liquid in the enclosed structure. The organic product is removed through the access means of the enclosed structure when a core temperature of the organic product reaches the predefined temperature.

Defrosting apparatus with repositionable electrodes
11089661 · 2021-08-10 · ·

A defrosting system includes a radio frequency (RF) signal source, at least one electrode proximate to a cavity within which a load to be defrosted is positioned, a transmission path between the RF signal source and the electrode, at least one bus bar in the transmission path that includes multiple ports to which the electrode may be coupled, a repositionable shelf that is attached to the electrode, and multiple support structures disposed at side-walls of the cavity that support the repositionable shelf. Standoff isolators may attach the electrode to the repositionable shelf and may electrically isolate the electrode from the repositionable shelf. The vertical position of the electrode may be changed by moving the repositionable shelf to be supported by different support structures of the multiple support structures while coupling the electrode to a different port of the multiple ports of the bus bar.

Apparatus and Method for Making Food Items
20210219561 · 2021-07-22 ·

Apparatus and method for making a food items such as a shepherd's pies is disclosed. The method includes preparing, cooking and cooling a pie filling, placing a predetermined amount of individual serving portions of the cooled pie filling into a container, preparing and cooking mashed potatoes, and extruding a predetermined individual serving portion of the mashed potatoes into each of a plurality of compartments formed in a mold tray, the compartments having a predetermined shape and depth. The pie filling and the mashed potatoes in the mold tray compartments are then frozen for storage and transportation. The shepherd's pies can then be assembled and baked at the point-of-sale.
