VACUUM MICROWAVE DRYING OF FOODS WITH PULSED ELECTRIC FIELD PRE-TREATMENT
A method of making a porous, dehydrated food product comprises subjecting a food product to pulsed electric field treatment to form pores in the cell membranes of the food product, freezing the treated food product, and exposing the treated frozen food product to microwave radiation in a vacuum chamber at a pressure that is less than atmospheric and at which the boiling point of water is above 0 C., causing the frozen food product to thaw and water to evaporate to produce the porous, dehydrated product. The process is faster than freeze-drying and consumes less energy. The pulsed electric field treatment does not result in structural damage to the product, despite the thawing of the frozen product during the drying process.

A method of freezing and preserving a frozen object includes: controlling a temperature in a container to keep the temperature at a predetermined freezing temperature and applying an AC voltage to the frozen object such that a weak current (1 A or more and 1,000 mA or less) flows through the frozen object in the container; and while applying the AC voltage to the frozen object in the container, freezing and preserving the frozen object at a predetermined freezing temperature for a predetermined preserved period or more.

A facility for thawing or tempering frozen food products, including: a chamber for receiving the products to be thawed or tempered, a fan for establishing a forced air flow in the chamber at a speed greater than or equal to 5 ms.sup.1, a heater for heating the products present in the chamber, including at least one of a device for injecting or creating steam in the chamber, a device for spraying, showering or misting hot water or water at room temperature, a device for mixing air on a hot heat exchanger or a heating resistor, and a high-frequency electromagnetic system, a device for cooling the air in the chamber including at least one of a device for injecting cold air via a dedicated inlet, a device for mixing air on a cold heat exchanger, and a device for misting, showering or spraying cold water in the chamber.

A frying unit, comprising an oil pan (1) which is essentially open on top, a transport unit (2), using which a basket (3) is movable from a filling position into the interior of the oil pan (1) and using which the basket (3) is movable from the interior of the oil pan (1) into an emptying position, wherein the oil pan (1) is designed in such a way that it can accommodate multiple baskets (3) simultaneously, and the transport unit (2) is designed in such a way that the baskets (3) are movable independently of one another.

A thawing machine includes a metal member supporting a pallet on which frozen objects are placed; an electric power supply which applies an AC voltage to the metal member so that a predetermined low current of 1 A or higher and 1000 mA or lower flows through the frozen objects; and a cover unit covering the frozen objects and having an air permeability and an electric conductivity, wherein the AC voltage is applied to the cover unit in addition to the metal member while the frozen objects are thawed.
