CHIA SEED DERIVED PRODUCTS AND THE PROCESS THEREOF

The present application relates generally to a process of manufacturing a plurality of products from chia seeds. The process comprises socking chia seeds in a large volume of water for a period of time followed by sonication at an elevated temperature to remove the soluble fiber, the mucilage of chia seeds using vacuum filtration. The oil component is extracted from mucilage removed chia seeds and the leftover is hydrolyzed in presence of an enzyme to afford a product of protein hydrolysates and a product of insoluble fiber of chia seeds. Both the process and the products are within the scope of this application.

GANODERMA LUCIDUM COMPOUND PREPARATION, AND PREPARATION METHOD AND USE THEREOF

Provided are a Ganoderma lucidum compound preparation, and a preparation method and use thereof. The preparation method includes: mixing a superfine powder of a Ganoderma lucidumfruiting body, -cyclodextrin and a part of water to allow embedding to obtain a first feed liquid; mixing the first feed liquid with a composite colloid stabilizer solution to obtain a second feed liquid, a colloid stabilizer in the composite colloid stabilizer solution including at least three agar, guar gum, locust bean gum, carrageenan, and xanthan gum; mixing the second feed liquid with a metal ion solution to allow adjustment to acidic and shearing sequentially to obtain a third feed liquid, metal ions in the metal ion solution including iron ions, calcium ions, or zinc ions; and mixing the third feed liquid with remaining water, subjecting a resulting mixture to homogenization and heating sequentially to obtain the Ganoderma lucidum compound preparation.

A powdery food comprises a powder derived from a starch-containing plant. The powdery food has a starch content of 10 mass % or more in terms of dry mass, a dietary fiber content of 1 mass % or more in terms of dry mass, a particle size d50 of 1,000 m or less after ultrasonication, and a 2,3-butanediol content of 50 ppb or more and 40,000 ppb or less and/or a diethylene glycol monoethyl ether content of 5 ppb or more and 40,000 ppb or less.

Method for modification of mung bean protein and preparation of simulated egg pulp based on the modified protein

The present disclosure discloses a method for modification of mung bean protein and preparation of simulated egg pulp based on the modified protein. A commercial mung bean protein isolate is used as a raw material in the present disclosure, then subjected to pH shift modification, ultrasonic treatment and protein-glutaminase treatment for compound modification to prepare a high-functionality modified mung bean protein isolate; and the modified mung bean protein isolate is used as a raw material, using high-speed emulsification and high-pressure homogenization are conducted to obtain a high-stability mung bean protein-based simulated egg pulp. In the present disclosure, the mung bean protein isolate prepared by compound modification has good solubility, emulsifying property and gelling property. The mung bean protein-based simulated egg pulp is in the form of a stable emulsion and has good fluidity and moderate gelling property, and uniformity and stability can still be maintained for a long time.

A process for preparing an edible receptacle, the process comprising the steps of: (a) dosing a required amount of edible receptacle ingredients into a support mould, the ingredients comprising at most 15 wt % binder and at least 50 wt % of particles of nuts by weight of the edible receptacle wherein the particles have an average diameter of from 0.001 to 5 mm and a water content of at most 5 wt %; (b) inserting a shaping tool into the ingredients in the support mould; and (c) vibrating the shaping tool at an ultrasonic frequency to form the ingredients into an edible receptacle of the desired shape is also provided.
