The invention relates to a self-supporting food composition, having a total non-gelatin protein content of 8-15 wt. %, based on the total weight of the composition, at least part of the total non-gelatin protein content being casein, the casein content being 7-13 wt. %, based on the total weight of the composition; the composition comprising 0.2-10 wt. % fat, based on the total weight of the composition; the composition comprising a cold-set gelling agent, in a relative amount of at least 0.3 wt. %, preferably 0.5-5 wt. %, based on the total weight of the composition; the composition comprising water; and the composition having an about neutral pH.

The ingestible hydrophobic actives are incorporated at high levels by using two types of pectin; an emulsifying pectin and a gelling pectin, wherein the weight ratio of the hydrophobic active to emulsifying pectin ranges from about 5:1 to about 35:1.

A method of producing microparticles by spray drying comprises the steps of providing a spray-drying feedstock solution comprising water, a volatile divalent metal salt, weak acid, 5-15% dairy or vegetable protein (w/v) and 1-20% active agent (w/v). The feedstock solution is adjusted to have a pH at which the volatile divalent metal salt is substantially insoluble. The feedstock solution is then spray-dried at an elevated temperature to provide atomised droplets, whereby the volatile divalent metal salt disassociates at the elevated temperature to release divalent metal ions which crosslink and aggregate the protein in the atomised droplets to produce micro-particles having a crosslinked aggregated protein matrix and active agent dispersed throughout the matrix.

The present invention relates to a preparation method of an edible and biodegradable environmental-friendly tableware, and the present invention provides a preparation method of a natural macromolecule-based edible and degradable tableware, where the principles of endogenous diffusion and polymer crosslinking to prepare an edible tableware such as a straw, a cup and a bowl from a microscopic state. The tableware material of the present invention may degrade rapidly under natural conditions and requires no composting. The tableware prepared by the method of the present invention has an excellent water stability performance. In terms of material acquisition, carrageenan, sodium alginate and other raw materials are widely available and stable, and may constitute a good substitute for grain starch, wood, etc., and the material cost is low.
