SYSTEM AND METHOD FOR UPRIGHT CASTING MOLD FOR PRODUCING A COMESTIBLE BAKED PRODUCT IN COMPLEX FORMS
20240122188 · 2024-04-18 ·

A system and method for producing a comestible baked product in complex shapes using upright cast molding wherein a portion of the interior cavity forms a baking cup which can optionally receive a liner. Embodiments generally include a first part and second part that are configured to be joined together along a seam. When configured, an outer surface is created and an inner surface cavity which creates a contiguous internal hollow space in the form of a three-dimensional shape is formed. A portion of this internal hollow space forms a cup. The cup can be circular shaped or a different shape entirely such as a square. The mold may provide a means for supporting the mold in its designated position. Other embodiments may include a single piece that is attachable to the rim of a cup of a multi-cup baking pan or to a single stand-alone cup.

In a method of baking both sides of ingredients between upper and lower dies with upper and lower electric heaters respectively, a temperature of one of the lower and upper dies is detected. Based on temperature information detected thereby, consumed power of the other of the lower and upper dies is controlled, thereby making a temperature of the lower die closer to that of the upper die, thereby baking both sides of the ingredients.

Baking Oven With Modular Heating Element

An oven for producing baked products has a plurality of baking irons (3) that are openable and closable and arranged in an elongated machine frame (1) along a continuous conveyor (2) that passes successively through a baking dough application region, a closing region, a baking area (4) for baking the baked products in which at least one heating arrangement (5) is provided for heating, an opening region, and a baked product removal region. The heating arrangement (5) comprises at least one heating element (6) that supplies thermal energy into the baking area (4). The oven has a first heating element receiving portion (14) at which the heating element (6) is detachably connected to the machine frame (1) via a guide device (15). The guide device (15) has at least one guide rail (16) and at least one guide element (17) that can be moved along the guide rail (16).

A bagel cookware comprises a round bagel tray sized to hold about four bagels in a twelve inch pot of boiling water. The bagel tray has about four vertical bagel support rods and a central socket comprising a cylindrical collar. This cylindrical collar has a pair of vertical slots to receive a T bar end of a lifting handle. When the handle is twisted the T bar end engages a pair of retainer channels. The handle also has a series of anti-floatation screens so the bagels cannot float while boiling. The chef can use the removable handle to place the cookware in boiling water, then pick up the cookware and place it in an oven. Commercial embodiments could use robotics and hold dozens of bagels on an equivalent apparatus. Alternative embodiments include a stamped anti-flotation screen, a hollow handle rod fitting over the central socket, and the T bar engaged through the central socket.
