An apparatus for receiving a baking mold and holding the baking mold in a desired position for baking. For a baking mold that is held together by a seal that extends around the edges of the mold, the apparatus includes a slot or trough that bisects the top of the apparatus and receives the seal within the trough. Other embodiments include receptors for protrusions from the baking mold and others include a rim that the baking mold sits over.

INSULATED POCKET BUN
A pan is provided that has a male mold portion, a housing that surrounds the male mold portion, and a top portion with a wing plate that has a complimentary outer surface to the end surface of the male mold portion. The complimentary outer surface forms a more consistent thickness of a baked item. The housing has a bottom surface with an aperture in the bottom to receive the male mold portion. The bottom surface acts to eject the baked item from the pan as the male mold portion is removed from the pan. The top portion can be formed with a continuous surface or have a wing plate that is spaced from a planar portion.
METHOD AND APPARATUS FOR OPTIMIZING A BAKING PROCESS
A baking process includes placing a baked goods carrier onto a work surface and filling the baked goods carrier with pieces of dough. Display data may be transmitted using a computer to a digitally controlled display apparatus close to the work surface for displaying a desired filling. The actual filling may be captured by an image recording apparatus and transmitted to the computer. The captured data of the actual filling may be evaluated using the computer and compared to data relating to the desired filling. The computer may be used to act on the filling process and/or the baking process.

OVEN SYSTEM FOR PRESSED FOOD ITEMS
Embodiments of the invention described herein thus provide systems and methods for creating a pressed food item in an oven cooking cavity. The oven system is secured within the oven cooking cavity and is not dependent upon oven door movement or any other oven function. A movable platen is configured to move up and down with respect to a lower platen in order to press a food item during the cooking process. The movable platen may be activated via an actuating arm that extends and is manipulated from outside the oven cooking cavity. In another example, the movable platen may be activated by motor.
PRECISION BAKING SYSTEM
A precision baking system includes a baking vessel that defines a vertical direction. The baking vessel includes a base wall and at least one sidewall. An aperture is formed in one of the base wall and the sidewall. The precision baking system also includes a temperature probe. The temperature probe includes a tip and a temperature sensor within the tip. The temperature probe is sized to extend through the aperture such that the tip of the temperature probe is spaced from the base wall and the sidewall of the baking vessel when the temperature probe is fully inserted into the baking vessel through the aperture.
