DAIRY-LIKE COMPOSITIONS AND RELATED METHODS
Provided herein are dairy-like analogue compositions and the methods of making the same using one or more recombinant proteins.
Manufacture of a cereal-based lactic acid-fermented product
The present invention relates to a culture or kit-of-part comprising a Lactobacillus delbrueckii subsp lactis strain, and uses thereof to manufacture a cereal-based lactic acid-fermented product, in particular a maize-based lactic acid-fermented product such as mahewu.
METHOD OF PRODUCING STREPTOCOCCUS THERMOPHILUS MUTANT STRAINS
The present invention is directed to a method of producing a Streptococcus thermophilus strain comprising the steps of a) Providing a mother strain in the form of Streptococcus thermophilus DSM32502, b) Growing a culture of the mother strain in the presence of a bacteriophage, to which the mother strain is not resistant, to obtain a number of mutant strains, which are resistant to the said bacteriophage, c) Measuring the acidification time of the bacteriophage-resistant mutant strains and the mother strain in a milk base and selecting at least one mutant strain with a reduced acidification time as compared to the mother strain to obtain a fast-acidifying mutant strain.
TARGETING QUORUM-SENSING PEPTIDES FOR DIAGNOSIS, TREATMENT AND/OR PREVENTION OF COLORECTAL CANCER METASTASIS
Quorum-sensing peptides are provided as diagnostic biomarkers, and quorum-sensing peptide inhibiting substances are provided for use in the treatment of metastasis of colorectal cancer in a subject, in particular a human subject. Methods for reducing metastasis of colorectal cancer in a subject include administering to the subject a microorganism that reduces or blocks activity of a pro-metastatic quorum-sensing peptide or a metabolite thereof present in a gastrointestinal tract or blood of the subject; and/or that reduces or blocks production of the pro-metastatic quorum-sensing peptide or the metabolite thereof in the gastrointestinal tract or blood of the subject. The pro-metastatic quorum-sensing peptide may include EntF or the metabolite EntF* of EntF.
CULTURE PROCESS FOR ENHANCING PROLIFERATION OF LACTIC ACID BACTERIA BY USING RED GINSENG
Provided are a lactic acid bacteria culture medium comprising red ginseng-derived dietary fiber; and a method for culturing lactic acid bacteria by using same, wherein red ginseng-derived dietary fiber is used in a lactic acid bacteria culture medium so that the number of viable lactic acid bacteria can be increased and the culturing thereof can be improved, and the method uses the culture medium so as to improve culturing under the same conditions, and thus is advantageous in terms of cost.
USE OF ST GAL(+) BACTERIA FOR PRODUCING A FERMENTED MILK PRODUCT WITH A RELATIVELY HIGH STABLE PH
A method for producing a fermented milk product (e.g. a yogurt) with a relatively high stable pH value at the end of the fermentation comprising inoculating milk with Streptococcus thermophilus (ST) Gal(+) bacteria.
TRADITIONAL CHINESE MEDICINE POLYSACCHARIDE EXTRACT FREEZE-DRYING PROTECTIVE AGENT, DIRECT-TO-VAT STARTER AND PREPARATION METHODS THEREOF
A traditional Chinese medicine polysaccharide extract freeze-drying protective agent, a direct-to-vat starter and preparation methods thereof are disclosed, which belong to the technical field of feed starter. The compound traditional Chinese medicine polysaccharide extract freeze-drying protective agent includes Poria cocos polysaccharide extract, Atractylodes macrocephala polysaccharide extract, Radix codonopsis polysaccharide extract, L-tyrosine, α-cyclodextrin and polyethyleneimine. Its application in the freeze-drying protection of direct-to-vat starter of aquatic fermentation feed can reduce the damage to the cells caused by freeze-drying, improve the survival rate of the cells in the starter after freeze-drying, effectively prolong the storage period of the starter, and ensure that the fermentation activity remains at a high level during storage.
YOGHURT CREAMINESS
The present invention relates to a method for selecting a yoghurt sample with a creamy mouthfeel, comprising the steps of: (i) providing one or more yoghurt samples; (ii) determining from the one or more yoghurt samples the time to breakup using an extensional rheometer; and (iii) optionally, measuring the viscosity and/or shear stress of the one or more yoghurt samples; and (iv) selecting one or more yoghurt samples.
LACTIC ACID BACTERIA COMPOSITION FOR PREPARING FERMENTED FOOD PRODUCTS
The invention relates to a composition for producing a fermented milk product comprising: (i) a starter culture comprising a glucose-fermenting Streptococcus thermophilus (St) strain and a glucose-fermenting Lactobacillus delbrueckii subsp. bulgaricus (Lb) strain; and (ii) a glucose-deficient Streptococcus thermophilus (St) strain, wherein said St strain is galactose-fermenting and carries a mutation in the DNA sequence of the glcK gene encoding a glucokinase protein, which mutation inactivates the glucokinase protein or has a negative effect on expression of the gene.
LACTOCOCCUS LACTIS FOR USE IN PREVENTING OR TREATING MINERAL DEFICIENCY
The present invention relates to the use of Lactococcus lactis suitable for preventing or treating mineral deficiency or insufficiency by increasing the bioavailability of phytate bound minerals. The present invention provides novel strains, compositions comprising said strains and methods for the preparation of such compositions.
