An oven appliance may include a cabinet, a plurality of chamber walls, a cooking surface, a top heating element, a temperature sensor, and a controller. The cooking surface may be defined in a cooking chamber. The top heating element may be mounted above the cooking surface to heat the cooking chamber. The temperature sensor may be disposed within the cabinet. The controller may be configured to initiate a cooking operation that includes initiating preheat activation of the top heating element, receiving temperature signals from the temperature sensor during the preheat activation, determining a preheat threshold is met based on the received temperature signals, and initiating cooking activation of the top heating element based on a cooking cycle having a predetermined time interval subsequent to determining the preheat threshold is met. Initiating cooking activation may include directing the top heating element based on the cooking cycle for the predetermined time interval.

The substrate includes a contact surface at a side facing the conveyor. The apparatus is configured for providing a relative movement between the contact surface and the conveying surface. The contact surface is configured for touching an upper side of said at least one piece of dough on said conveying surface. And the apparatus further includes a heating device configured for heating at least a part of a circumference of the at least one piece of dough facing the contact surface for forming a film on said part of the circumference.

In some cases, a burner assembly for a conveyor oven includes at least one burner tube extending into a plenum and positioned to receive at least a portion of a flame emitted by the burner assembly, wherein a rifling plate extends through the burner tube and is slidingly positioned within the burner tube. Also, in some cases a baffle in a plenum of the oven is positioned opposite the burner tube and defines a fluid conduit having an entrance into which air heated from the burner tube is received and an exit separate from the entrance and through which air is discharged.

A method of operating an electric oven includes generating a door-closed signal if the oven door is in a closed position. The electric broiling element is activated to perform a closed-door broil operation in response to generation of the door-closed signal. The temperature within the cooking chamber of the electric oven is determined during the closed-door broil operation and the electric broiling element is deactivated if the temperature within the cooking chamber exceeds a shutoff temperature.
