A processing line for a food mass including a size controller to control a food mass discharged piece by piece from a kneading bowl. The size controller includes a space-fixed portion including parallel or substantially parallel separating strips with longitudinal axes extending in a first direction, and a punch movable between an upper position and a lower position and movable towards the separating strips and including a base plate to press pieces of the food mass on the separating strips against the separating strips and to comminute the food mass.

The first mixing tool is configured to be driven in rotation around a first axis of rotation. A second mixing tool is configured to be immersed at least partially in the mixing tank and configured to mix the ingredients and/or the preparation, the second mixing tool being configured to be driven in rotation around a second axis of rotation. The first and second axes of rotation are substantially coaxial.
STIRRING DEVICE AND HOUSEHOLD DOUGH MIXER
A stirring device and a household dough mixer. The stirring device includes a rotating plate, an annular sliding plate, a stirring rod, a rotating disk, a main motor, a deceleration device and a transmission assembly. The rotating plate is provided with a groove. Opposite inner sides of the groove are both provided with a sliding slot. The annular sliding plate is provided with an opening, and arranged inside the groove. The stirring rod is arranged on the annular sliding plate. The rotating disk is connected to the annular sliding plate, and is connected to an output shaft of the main motor. The deceleration device is arranged between the rotating plate and the rotating disk. The transmission assembly is arranged between the sliding slot and the rotating disk. The rotating disk rotates to drive the annular sliding plate through the transmission assembly to reciprocate along the sliding slot.
Kneading dough hook assembly and kneading dough machine containing the same
The patent application relates to a kneading dough hook assembly and the kneading dough machine containing the same. The kneading dough hook assembly includes a mounting frame, a first kneading dough hook, a second kneading dough hook, a first fool-proof mechanism and a second fool-proof mechanism. The mounting frame includes two mounting rods. The first and second kneading dough hooks are mounted on the two mounting rods respectively. The first fool-proof mechanism is provided between the first kneading dough hook and its corresponding first mounting rod. The second fool-proof mechanism is provided between the second kneading dough hook and its corresponding second mounting rod.
Apparatus system and process for making a bakery product
A system to make a bread loaf includes means for moving continuously pans along a predetermined path, each pan including at least one cavity sized and configured for making a bread loaf. Means conditioning continuously a batch of unconditioned dough reduces the size of air pockets therein to form a conditioned dough. Means continuously extrude the batch of conditioned dough at a controlled volumetric feed rate and at a controlled pressure to provide a constant stream of conditioned dough that is continuously cut into individual packets. The entire batch is converted into individual packets of conditioned dough corresponding to a predetermined number of bread loaves to be produced from the batch, with all the packets deposited individually in cavities of the pans within 10-20 minutes after mixing ingredients that make the batch.
KNEADING TOOL
A kneading tool of a type prearranged for being mounted rotatable about an axis of rotation of a kneading machine includes: a central shaft defining a main axis; and plurality of arms transverse to said shaft, which are positioned in different orientations about the main axis and/or in different positions along said axis so as to be staggered and not overlying with respect to one another.
Dough kneading device
A dough kneading device has a kneading drum for predefining the bottoms and side walls of kneading chambers, which serve to receive dough pieces to be kneaded. A kneading belt over a circumferential portion abuts the kneading drum for closing the kneading chambers. The kneading belt has a plurality of passage openings with a typical diameter which is smaller than 12 mm. This results in a dough kneading device with which even moist doughs can be kneaded without the use of anti-adhesive agents, if possible, without the dough adhering to the kneading belt and/or the kneading chambers in an unwanted manner.
SYSTEM AND METHOD FOR BATTER MIXING AND APPLICATION
A batter mixing system has a mix tank. The mix tank includes a dry mix feed, a liquid feed, a mixer, and a mix tank load cell. A distribution tank is in communication with the mix tank via a transfer pump. The distribution tank includes a distribution tank load cell. The distribution tank is in further communication with a process line via a feed pump. A control system is in communication with each of the mix tank load cell and the distribution tank load cell. The control system is configured to operate each of the mix tank and the distribution tank.

The present invention relates to a kneading member (107) for a device for kneading a dough, comprising: —a mounting disc (109); —a kneading tool (111) for mixing the ingredients which constitute a dough, comprising: —an upper portion (121), extending from said mounting disc, —a mid-portion (123), in the extension of said upper portion, and —a lower portion (125), in the extension of said mid-portion. The kneading member (107) according to the invention is noteworthy in that the kneading tool (111) consists of a circular helix, the angle of winding of which is non-constant between said upper, mid- and lower portions of the tool (111) and in that the angle of winding of the lower portion (125) is less than that of the mid-portion (123). The invention also relates to a kneading device fitted with such a kneading member.
