KNEADING MACHINE FOR DOUGH WITH PINCH PROTECTION
A kneading machine includes a kneading machine frame with a lower portion and a head movable relative to the lower portion between a lower operating position and an upper cleaning position. A kneading bowl is on the lower portion and a drivable kneading tool and a lid closing an opening of the kneading bowl in the operating position are the head. The lid is surrounded on a circumferential side by a first safety ring of a safety device which projects beyond the lid on an underside thereof, and which is movably fastened to the lid. The safety device includes a detector to detect a relative movement between the lid and the first safety ring. The kneading machine frame includes at least two trunnion bearings, each defined by a trunnion and a matching receptacle.
Method for an adaptive kneading technology for a food preparation appliance
A method to make a single dough ball using adaptive kneading technology is explained. An adaptive kneading technology which resides in a processor is used to form an optimal viscoelastic dough ball. The flour and liquid are mixed, the initial dough is contacted, the reading for resistance is recorded, if need be corrected and finally a dough ball is dispensed to make a flat bread.
Apparatus system and process for making a bakery product
A system to make a bread loaf includes means for moving continuously pans along a predetermined path, each pan including at least one cavity sized and configured for making a bread loaf. Means conditioning continuously a batch of unconditioned dough reduces the size of air pockets therein to form a conditioned dough. Means continuously extrude the batch of conditioned dough at a controlled volumetric feed rate and at a controlled pressure to provide a constant stream of conditioned dough that is continuously cut into individual packets. The entire batch is converted into individual packets of conditioned dough corresponding to a predetermined number of bread loaves to be produced from the batch, with all the packets deposited individually in cavities of the pans within 10-20 minutes after mixing ingredients that make the batch.
SYSTEM AND METHOD FOR BATTER MIXING AND APPLICATION
A batter mixing system has a mix tank. The mix tank includes a dry mix feed, a liquid feed, a mixer, and a mix tank load cell. A distribution tank is in communication with the mix tank via a transfer pump. The distribution tank includes a distribution tank load cell. The distribution tank is in further communication with a process line via a feed pump. A control system is in communication with each of the mix tank load cell and the distribution tank load cell. The control system is configured to operate each of the mix tank and the distribution tank.
METHOD FOR DETERMINING A KNEADING STATE OF A DOUGH, SYSTEM FOR MONITORING THE KNEADING STATE AND KNEADING MACHINE
A method for determining a kneading state of a dough such as a cereal dough, wherein the dough being-is configured to be kneaded in a kneading machine, the kneading machine comprising a plurality of having sensors configured to measure representative quantities of the dough during a kneading cycle and at least one kneading tool. The method includes the following steps: continuously collecting the measurements of the representative quantities of the dough during the kneading cycle, determining a kneading state based on a kneading state model defined as a function of the measurements of the representative quantities, the kneading state model being defined or adapted based on a learning phase, and checking up the fulfillment of a kneading stop criterion based on the kneading state.
METHOD AND APPARATUS FOR PROVIDING RUN TIME RESERVOIR IN DOUGH PORTIONING SYSTEM DURING DOUGH FEEDER REFILL CYCLE
A novel method and apparatus of controlling dough feeding to process and portioning machines in automated processing lines is provided. The completed system can supply dough and dough like materials to a portioner and or allow it to continue its operation during a period of time when the one or more feeding machine needs to go to a mixer to obtain another load of bulk material, a refill cycle, and returns to a home station so as to resume feeding operations of dough. The desired effect is to have a feeding system that can both store dough to continue dough supply to one or more portioning machine(s) while the feeding machine(s) can go to a mixer to obtain a new batch of bulk dough and again return to home position where it can feed dough to one or more conveyor system(s) to maintain feed of dough to portioning machine(s) without an interruption due to stoppages in feed arising from the need for the feeder to go to a mixer and receive additional dough from the mixer and then return to the feeding conveyors. Additionally the controller allows for a variety of settings regarding the dough level and the portioner to prevent air entrapment.

A mixing machine includes a head extending over a bowl receiving location, a rotatable output shaft for receiving a mixer tool, and a gear system for effecting rotation of the rotatable output shaft about its axis and orbiting of the shaft axis about another axis. An electric motor includes an output operatively connected to drive the gear system. A variable frequency drive is connected to deliver 3-phase power to the electric motor to achieve variable speed and torque. The variable frequency drive includes a plurality of embedded sensors, including embedded current sensors and embedded voltage sensors. A diagnostic control is configured and operable to analyze outputs from the embedded sensors and produce an alert indication upon identification of a characteristic indicative of at least one of input power brownout, input power surge, machine short circuit, motor phase insulation arch, motor phase to ground arch or motor loss of phase.

The device includes a base and motor unit; a container having a mixing portion and an extrusion portion; a flour dispensing assembly; a water dispensing assembly; an additive dispensing assembly; one or more sensors operatively associated with the mixing portion of the container for measuring selected volumes of flour, water and the one or more additives dispensed; a mixing and extrusion assembly for mixing and extruding a pasta product; a user interface to allow a user to input a desired pasta product; and a controller operatively associated with the user interface and the one or more sensors and configured to autonomously control operation of the motor, the mixing and extrusion assembly, the flour dispensing assembly, the water dispensing assembly and the additive dispensing assembly to produce the desired pasta product.
