KNEADING MACHINE FOR FOOD DOUGHS, HAVING A COVER HAVING A QUICK CLOSURE
A kneading machine for food doughs includes a kneading machine frame with a lower portion and a head portion attached to the lower portion. A kneading bowl can be arranged on the lower portion, a drive to rotate the kneading bowl is provided, and a kneading tool and a drive to drive the kneading tool are held on the head portion. Safety-relevant components of the kneading machine are surrounded by a housing and a major portion of the kneading machine frame is exposed. The exposed kneading machine frame includes struts between which respective free spaces are defined. The kneading machine includes a removable cover which covers at least a major portion of the free spaces defined by the exposed kneading machine frame towards an outside. The cover is fastened to the kneading machine frame and/or the housing by connections which can be released without tools.
KNEADING MACHINE FOR DOUGH WITH PINCH PROTECTION
A kneading machine includes a kneading machine frame with a lower portion and a head movable relative to the lower portion between a lower operating position and an upper cleaning position. A kneading bowl is on the lower portion and a drivable kneading tool and a lid closing an opening of the kneading bowl in the operating position are the head. The lid is surrounded on a circumferential side by a first safety ring of a safety device which projects beyond the lid on an underside thereof, and which is movably fastened to the lid. The safety device includes a detector to detect a relative movement between the lid and the first safety ring. The kneading machine frame includes at least two trunnion bearings, each defined by a trunnion and a matching receptacle.
A KNEADING OR MIXING MACHINE
A kneading or mixing machine including a housing with opposite side walls, a motor in the housing for driving a kneading or mixing tool. A safety shield mounted to bearings for turning about an axis (A), the safety shield adapted to at least partly shield the tool when the safety shield is turned to a shielding position, the safety shield including a pair of arms. Each arm having a head at a free end thereof, a central portion of each bearing receiving the head to allow for said turning, and the central portion of each bearing communicating with an entry slit configured for insertion of the head into the central portion in a direction transverse to the axis (A).
METHOD AND APPARATUS FOR PROVIDING RUN TIME RESERVOIR IN DOUGH PORTIONING SYSTEM DURING DOUGH FEEDER REFILL CYCLE
A novel method and apparatus of controlling dough feeding to process and portioning machines in automated processing lines is provided. The completed system can supply dough and dough like materials to a portioner and or allow it to continue its operation during a period of time when the one or more feeding machine needs to go to a mixer to obtain another load of bulk material, a refill cycle, and returns to a home station so as to resume feeding operations of dough. The desired effect is to have a feeding system that can both store dough to continue dough supply to one or more portioning machine(s) while the feeding machine(s) can go to a mixer to obtain a new batch of bulk dough and again return to home position where it can feed dough to one or more conveyor system(s) to maintain feed of dough to portioning machine(s) without an interruption due to stoppages in feed arising from the need for the feeder to go to a mixer and receive additional dough from the mixer and then return to the feeding conveyors. Additionally the controller allows for a variety of settings regarding the dough level and the portioner to prevent air entrapment.
AUTOMATIC TABLE-TOP MACHINE FOR KNEADING AND EXTRUDING PASTA
A machine for kneading and extruding pasta, having a machine body, which includes electric gear motor having an output shaft with horizontal axis, a transmission from the output shaft to a driven shaft with a horizontal axis and parallel to the axis of the output shaft and coaxial to a shaft of a kneading reel, projecting externally to the machine body in a dough forming tank, having below and parallel to the shaft of the kneading reel an extrusion channel, in which a worm screw feeds an extrusion mass for forming pasta. The tank is a hopper, having two lateral walls, opposite and converging at the bottom into the extrusion channel, and two opposite vertical walls, front and rear. The rear wall of the tank is juxtaposed against a vertical wall of the machine body as a stiffening frame, having an upper horizontal cross-member, which forms a top edge of the tank, and a pair of V-shaped branches that form respective edges of the opposite lateral walls and of the channel of the tank. The stiffening frame is extends beyond the tank and provides an outer flange fixed relative to the tank. The tank is fixed with respect to the machine body by a detachable connection and is cantilevered relative to the vertical wall of the load-bearing frame. The detachable connection connects the outer flange with respect to the vertical wall of the load-bearing frame.

Dough Roller Assembly and Method of Cleaning Same
A dough roller assembly including a housing, a first roller, a second roller, and a roller key. The housing has a drive port adapted and configured to receive a drive shaft of a stand mixer. The first roller is within the housing and operably connected to the drive port such that, when the drive port receives the drive shaft of the stand mixer, rotation of the drive shaft of the stand mixer rotates the first roller in a first direction about a first axis of rotation. The second roller is within the housing and operably connected to the first roller such that rotation of the first roller rotates the second roller in a second direction about a second axis of rotation. The roller key is adapted and configured to be received by the drive port and to permit manual rotation of the first and second rollers by a user.
