FOOD DOUGH FORMING DEVICE
In a food dough forming device according to the present invention, a dough forming flow path is formed to be enclosed between at least two rotatable rollers and between two wall plates. At least one of the at least two rotatable rollers is at least one long rotatable roller (31A, 32A). At least one remaining rotatable roller is at least one short rotatable roller (33A, 31B, 32B, 33B). A far-side wall plate (53) of the two wall plates has a fitting recess (53A, 53B) into which an arc portion of a periphery of the long rotatable roller is fitted, and a recessed cutout (53C, 53D, 53E, 53F) at the rotational shaft for the short rotatable roller. The short rotatable roller is fitted onto the rotational shaft for the short rotatable roller to abut the far-side wall plate. The nearside wall plate is disposed to abut the short rotatable roller. An axial movement of the short rotatable roller is limited by the two wall plates.
METHOD AND DEVICE FOR CREATING AN INVERTED PUFF PASTRY DOUGH OR A CROISSANT DOUGH
The present invention relates to a method for creating a inverted puff pastry dough or croissant dough, comprising the steps of:
A. Creating a laminate extending in a length ad a width direction by: A1. Providing a first layer of a mixture of fat such as margarine or butter and flour or starch on a substrate; A2. Providing at least one layer of dough on top of the mixture; A4. Providing a second layer of a mixture of dough and flour or starch on top of the dough layer;
C. Cutting the thus obtained laminate in the width direction, as to obtain multiple laminate pieces;
D. Stacking the laminate pieces in a partly-overlapping manner in the length direction, while essentially outlining them in the width direction; and
E. Rolling the stack a first time in a rolling direction in or against the length direction, thus obtaining a inverted puff pastry dough or croissant dough.
ELEMENT OPENING AND CLOSING MACHINE
This invention relates to an element opening and closing machine for processing raw material having a first element and a second element through which the processed raw material passes, wherein the first element is connected to a mechanism which is connected to a power shaft, said first mechanism being in charge of generating a motion of the first element towards the second element. In particular, the element opening and closing machine has a coupling arranged in a perforation of a support, such that the coupling may rotate in said perforation. The first mechanism is connected to the coupling, i.e., the first mechanism may rotate so the first mechanism may mitigate failures in the presence of reaction loads that may be caused in the presence of foreign elements in the raw material passing through the first and second elements.
Device, Dough Line and Method for Rolling Dough
The present invention relates to a device for rolling dough, comprising a conveyor, in particular an endless conveyor belt, for conveying a dough sheet in a direction of conveyance, a roller, for rolling the dough sheet with at least a directional component perpendicular to the direction of conveyance, wherein the device is configured for varying the distance between the upper surface of the conveyor and the roller during rolling.
Food dough extrusion machine
A food dough extrusion machine (10). The machine has a platform (2) and at least one extrusion unit (1) supported by the platform (2). The extrusion machine (10) has a guidance (3) by which the at least one extrusion unit (10) is supported on the platform (2) and by which the at least one extrusion unit (10) is adjustable relative to the platform (2) and/or removable from the platform (2).
Element opening and closing machine
A machine opening and closing element for processing raw material having a first element and a second element through which the processed raw material passes, wherein the first element is connected to a mechanism which is connected to a power shaft, said first mechanism being in charge of generating a motion of the first element towards the second element. In particular, the machine for opening and closing element has a coupling arranged in a perforation of a support, such that the coupling may rotate in the perforation.
ROTARY DOUGH SHAPER WITH ADJUSTABLE BACK PLATE ASSEMBLY
A rotary dough shaper including a drive assembly, a support assembly, and a rolling assembly. The rolling assembly comprises a gauging drum having an external surface and an adjustable back plate having an internal surface. The support assembly supports the gauging drum and the adjustable back plate such that a rolling gap is formed therebetween, and the gauging drum is rotatably coupled to the support assembly such that the gauging drum rotates with respect to the support assembly to roll a dough ball between the adjustable back plate and the gauging drum.
GYOZA WRAPPER MOLDING MACHINE AND GYOZA WRAPPER MATERIAL LUMP
A molding machine 1 is provided, which molds a gyoza wrapper by rolling a gyoza wrapper material lump. A first roller 12 rolls the gyoza wrapper material lump vertically downward to form an approximately elliptical semi-finished product. A direction changing device 30 including a pendulum 31 is positioned vertically below the first roller 12. The pendulum 31 includes a fulcrum portion 314 and an edge receiving portion 311 positioned closer to the central portion side of the first roller 12 than a position immediately below the fulcrum portion 31, which receives the front edge of the semi-finished product. When the semi-finished product is received by the edge receiving portion 311, the pendulum 31 changes the direction of the semi-finished product. A second roller 22 positioned vertically below the first roller 12 then rolls the semi-finished product vertically downward, so as to form a gyoza wrapper.
Gyoza wrapper molding machine
A molding machine 1 is provided, which molds a gyoza wrapper by rolling a gyoza wrapper material lump. A first roller 12 rolls the gyoza wrapper material lump vertically downward to form an approximately elliptical semi-finished product. A direction changing device 30 including a pendulum 31 is positioned vertically below the first roller 12. The pendulum 31 includes a fulcrum portion 314 and an edge receiving portion 311 positioned closer to the central portion side of the first roller 12 than a position immediately below the fulcrum portion 31, which receives the front edge of the semi-finished product. A food dough extrusion machine (10). The machine has a platform (2) and at least one extrusion unit (1) supported by the platform (2). The extrusion machine (10) has a guidance (3) by which the at least one extrusion unit (10) is supported on the platform (2) and by which the at least one extrusion unit (10) is adjustable relative to the platform (2) and/or removable from the platform (2).
