The machine has a frame (6), a die roller (4) rotatably mounted to the frame (6), a knife (3) for scraping dough from the die roller (4), the knife (3) extending along the die roller (4), and a driver for moving the knife (3) between a scraping position and an inactive position, with the driver having a first drive (1) acting on the first end (31) of the knife (3) and a second drive (2) acting on the second end (32) of the knife (3). The first drive (1) and the second drive (2) can be actuated independently of each other.

The method comprises the steps of: i. defining a target time interval constituting 40-90 percent of the specific time interval, ii. determining the actual weight of the batch received within a receptacle of the weighing system when the target time interval has passed, iii. dependent on the actual weight, a. determining a first operational mode provided the actual weight being reached in respect of the target weight within the target time interval, then continuing operating the first conveyor controlled by the controller at the identical speed, or b. determining a second operational mode provided the actual weight exceeding the target weight within the target time interval, then operating the first conveyor controlled by the controller at a decreased speed, or c. determining a third operational mode provided the actual weight being below the target weight within the target time interval, then operating the first conveyor controlled by the controller at an increased speed.

The present invention provides a dumpling automation machine for preparing dumpling-like food product, comprising a pressing and cutting device for dough pad, a filling injection device and a forming assembly, wherein the forming assembly comprises: a mold assembly for supporting a dough pad injected with a filling and maintaining the dough pad in an upright position; a pre-forming assembly for pre-pressing the upright dough pad to form a pre-pressed crest; and a forming assembly for pressing the pre-pressed crest to from a crest; wherein the mold assembly is configured to successively support the dough pad in different positions along a conveyor, and wherein in a pre-forming position, pre-bending portions on the two ends of the crest are formed by the pre-forming assembly, and in a forming position, the pre-bending portions are bent to form bending portion by a bending assembly.

The present invention provides a dumpling automation machine for preparing dumpling-like food product, comprising a pressing and cutting device for dough pad, a filling injection device and a forming assembly, wherein the forming assembly comprises: a mold assembly for supporting a dough pad injected with a filling and maintaining the dough pad in an upright position; a pre-forming assembly for pre-pressing the upright dough pad to form a pre-pressed crest; and a forming assembly for pressing the pre-pressed crest to from a crest; wherein the mold assembly is configured to successively support the dough pad in different positions along a conveyor, and wherein in a pre-forming position, pre-bending portions on the two ends of the crest are formed by the pre-forming assembly, and in a forming position, the pre-bending portions are bent to form bending portion by a bending assembly.
Device and method for forming dough pieces
The present disclosure relates to a device for forming a substantially straight, in particular wound, dough piece into an annular shape, comprising a bending unit for annularly bending the dough piece. The bending unit may comprise at least one retaining jaw, two movably supported shaping jaws, a lifting device and a stamp. While being in engagement with the dough piece, one of the shaping jaws provided with a projection is displaceable along a displacement path section between an initial position, in which the projection is in contact with a lower surface of the dough piece, and a final position, in which the projection has been brought out of engagement with the dough piece.
ANGLE ADJUSTMENT METHOD AND ANGLE ADJUSTMENT MECHANISM FOR FOOD BLANKS
Disclosed is an angle adjustment method for food blanks including: fixing a fixing device to a first corner of a wrapping skin at a first station; driving the fixing device to move to a second station by a moving driving member to drag the wrapping skin; and when dragging the wrapping skin, driving the fixing device to rotate by a rotation driving member. The present invention also provides an angle adjustment mechanism for food blanks for implementing the above method. The angle adjustment method and the mechanism for food blanks according to the present invention can adjust the angle of the food blanks and rotate the first corner of the wrapping skin to a specified angle to facilitate subsequent processing. Additionally, the wrapping skin has high angle adjustment accuracy, and the angle adjustment mechanism operates stably, avoiding damage to the wrapping skin.

The present invention relates to a dough handling device, comprising a dough sheeting stage, for delivering a dough sheet with a predetermined thickness and a controllable dough stretching or condensing stage, for locally stretching or condensing the dough sheet, comprising a first stretching or condensing conveyor belt with a controllable speed, configured for receiving the dough sheet from the dough sheeting stage and transporting said dough sheet in a direction of conveyance, from upstream to downstream and a second stretching or condensing conveyor belt with a controllable speed for transporting the dough sheet in said direction of conveyance, and a controller, for controlling the speed of the first stretching or condensing conveyor belt and/or the second stretching or condensing conveyor belt and/or the relative speed of the first stretching or condensing conveyor belt and the second stretching or condensing conveyor belt and therewith to locally alter the density and/or thickness of the dough sheet.
