Baklava, a well-known and popular confection, typically requires preservatives to have a long shelf life. The present technology preserves the baklava naturally by homogenizing the baklava, partially or fully, until it is malleable with the hand. The malleable version thereof made into a regular shape such as a sphere and then covered with an edible sealant such as melting chocolate such that the moisture is substantially maintained in the baklava over a period of, at least, weeks.

A system for manufacturing a multi-layer shortcake can be realized by reversing the manufacturing process of the shortcake to normal. The assembly line conveyor system includes a package container having a top opening as a cake mold and a take-out film set as an insole in the package container. The packaged shortcake includes a topping layer of a cake, a first cream layer, a shape retaining sponge block, a second cream layer, and a cake base platform on the insole film and closed with a bottom lid. Preferably, the packaged shortcake contains a cake block between the first cream layer and the second cream layer for supporting the shape of the shortcake.

FORMULA AND PROCESS FOR PRODUCING FROZEN SHEETED DOUGH
20210235710 · 2021-08-05 ·

A process of producing a frozen sheeted dough, which can be prepared without using stress-free sheeting process and transferred directly from the freezer to oven without a proofing step. The process comprises mixing the dough ingredients comprising yeast and chemical leavening agents; resting the dough to form air cell structure; subjecting the dough to high stress sheeting compressions and freezing the dough. The frozen dough can be directly transferred to an oven without a proofing step. The resulting baked product has desirable texture and taste.
