Method of deboning animal thighs for separating and collecting meat therefrom and apparatus for performing the method
A method is disclosed for mechanically deboning animal thighs for separating and collecting meat therefrom and an apparatus for performing the method, including automated individual processing steps. The processing steps include: grasping a thigh bone of an animal thigh at a hip knuckle with a bone holder; cutting tissue near the hip knuckle; and engaging the thigh bone adjacent the bone holder with a meat stripper. The processing steps further include: moving the bone holder and meat stripper away from one another in a direction substantially coextensive with the longitudinal extent of the thigh bone; allowing the meat stripper to pass over the knee knuckle; and collecting the meat separated from the bone. In particular the method includes and the apparatus performs the process step of cutting tissue adjacent a knee knuckle of the thigh bone, prior to allowing the meat stripper to pass over the knee knuckle. The apparatus includes a plurality of processing stations for carrying out the individual steps, and the processing stations are arranged along a path of conveyance defined by a conveyor chain moving through a predefined path.

3D IMAGING SYSTEM AND METHOD OF IMAGING CARCASSES
A method and system of imaging carcasses involves acquiring a first set of multi-view images from respective multiple positions at a first side of a passageway, and a second set of multi-view images from respective multiple positions at a second side of the passageway. The multi-view images are acquired at a first time point upon detection of a carcass at a predetermined position at the passageway. A 3D carcass model is computed from the first and the second set of multi-view images, and is based on a 3D point cloud and/or a polygon surface. An occluded or spatially sparsely represented region locates a first region of the 3D model. The 3D model is manipulated at least at the first region to change the volume or distribution of volume of the 3D model in accordance with a weight registered by a load cell and/or a representation of a carcass suspension position.

FOOD PROCESSING INSTALLATION
A food processing installation for processing food items includes: a food processing enclosure; a cutting device in the food processing enclosure; a particle capturing enclosure; an exhaust vent connected to the food processing enclosure via a vent inlet and connected to the particle capturing enclosure via a vent outlet; and a spray nozzle arrangement separate from the cutting device and located downstream relative to the vent inlet. The exhaust vent is configured to conduct an exhaust flow of exhaust air comprising food aerosols emitted from the food processing enclosure to the particle capturing enclosure, and the spray nozzle arrangement is configured to eject a spray of droplets that coalesce with the food aerosols. A method is provided for filtering air from a food processing installation and a particle capturing device.
