A system and method for removing a bone from a primal or sub primal meat cut that includes a conveyance system having a continuous conveyor extending along a path of conveyance from an upstream point at the loading end to a downstream point at the discharge. The system includes a pair of opposing support surfaces projecting vertically upward from a first position of the continuous conveyor along the path of conveyance whereby each of the opposing support surfaces of the pair inwardly extend one toward the other, from an upper level downward vertically to a lower level. Each opposing support surface of the pair has a downward slope and each opposing surface of the pair converges at a recessed valley at the lower level.

A tray conveyor comprising ice-coated magnetic trays driven by a linear-motor stator along a rail track. The ice coating is applied to the trays to provide a product-bearing ice surface. After the product is processed and transferred off the tray, the top layer of the contaminated ice coating is removed and the tray with the remaining ice coating reused.

At least one cutting device having an upwardly and downwardly facing surface structure is provided and a moving mechanism is mechanically connected to the at least one cutting device for controlling the position of the at least one cutting device on the basis of the determined cutting position. A carcass displacement device is arranged to initiate displacement of the carcass part away from the at least one cutting position while the carcass part or a resulting sub-part carried by a carrier and is located between the upstream cutting edge and the downstream edge.

In an embodiment, an apparatus for flattening a meat product is provided. The apparatus includes a conveyor, a first stamp disposed parallel to and over the conveyor, the first stamp configured to move vertically towards and away from the conveyor, a second stamp disposed perpendicular to and over the conveyor, and a plate disposed perpendicular to the conveyor, the plate disposed parallel to the second stamp, the second stamp being configured to move horizontally towards and away from the plate.

In an embodiment, an apparatus for flattening a meat product is provided. The apparatus includes a conveyor, a first stamp disposed parallel to and over the conveyor, the first stamp configured to move vertically towards and away from the conveyor, a second stamp disposed perpendicular to and over the conveyor, and a plate disposed perpendicular to the conveyor, the plate disposed parallel to the second stamp, the second stamp being configured to move horizontally towards and away from the plate.
Method of deboning animal thighs for separating and collecting meat therefrom and apparatus for performing the method
A method is disclosed for mechanically deboning animal thighs for separating and collecting meat therefrom and an apparatus for performing the method, including automated individual processing steps. The processing steps include: grasping a thigh bone of an animal thigh at a hip knuckle with a bone holder; cutting tissue near the hip knuckle; and engaging the thigh bone adjacent the bone holder with a meat stripper. The processing steps further include: moving the bone holder and meat stripper away from one another in a direction substantially coextensive with the longitudinal extent of the thigh bone; allowing the meat stripper to pass over the knee knuckle; and collecting the meat separated from the bone. In particular the method includes and the apparatus performs the process step of cutting tissue adjacent a knee knuckle of the thigh bone, prior to allowing the meat stripper to pass over the knee knuckle. The apparatus includes a plurality of processing stations for carrying out the individual steps, and the processing stations are arranged along a path of conveyance defined by a conveyor chain moving through a predefined path.

SLICING MACHINE AND METHOD FOR SLICING ELASTIC STRANDS IN PARTICULAR MEAT STRANDS
A slicing machine for slicing meat strands that have a cross section that varies over a longitudinal extension in large numbers and as quickly as possible into weight precise slices. In one embodiment, two meat strands are received adjacent to each other in a respective form tube and pushed against a respective separately adjustable stop plate independently from each other by a controlled longitudinal press plunger and compressed in the longitudinal direction. In addition, a cross section of the form tubes may be reduced in a first transversal direction jointly and in a second transversal direction independently from each other and thus the respective meat strand is transversally compressed to a constant cross section prior to slicing.
