In the method, the raw meat is vibrated to loosen meat tissue and improve meat tenderness, or is vibrated during curing to reduce curing time while improving the tenderness. The method mechanically vibrates the raw meat to loosen the structure of the raw meat, and ultimately improves the meat tenderness; or vibrates during curing to improve the tenderness while reducing the curing time, effectively ensuring the sensory meat quality. The method of the present disclosure not only effectively solves the problem of the tenderness of meat and meat products, but also improves sensory quality and safety thereof, enables wider popularization and utilization of meat and meat products, and directly increases economic benefits of enterprises and opens up a new way for future development thereof.

Macerator having automated roller spacing control

The present invention is a processing device, such as a macerator for use in processing various types of food products, that includes an automatic adjustment mechanism for adjusting the position of a roller disposed within the macerator. The mechanism includes a controller operably connected to a motor that can move the roller within the macerator to vary the position of the roller with respect to another roller located in the macerator. Inputs to the controller are used to control the operation of the motor to move the roll into a desired configuration associated in a storage medium in the controller with a particular food product to be processed. The input to the controller can also be used to simultaneously adjust the position of other components of other processing devices in a food processing system, such as an injector to remove the need for individually adjust each device in the system. Also, the controller can utilize other devices on the macerator to dynamically adjust the position of the rollers in response to the individual food products being treated in the macerator.

Roller system adapted to be used in relation to a flattening apparatus for flattening foodstuff

A flattening apparatus with a roller system including an impact resistant system and a first conveyor belt facing and arranged opposite to the impact resistant system and having a flattening area between the first conveyor belt and the impact resistant system. The roller system is rotatable mounted adjacent to the first conveyor belt distally away from the impact resistant system across the first conveyor belt. Foodstuff is flattened and compressed by rotating the roller system while conveying the foodstuff through the flattening area such that an outwardly protruding surface structure presses the first conveyor belt towards the impact resistant system. The surface structure is askew in relation to the longitudinal axis of the roller system and is designed with a portion provided in contact with the first conveyor belt at all times during rotation of the roller system.

The utility model discloses a meat tenderizer with adjustable spacing, which relates to the field of meat processing technology. The meat tenderizer with adjustable spacing comprises a fixing frame, an installation chamber, a driving tendon cutting roller, a driven tendon cutting roller and a driving mechanism, wherein, the installation chamber is arranged in the fixing frame, the driving tendon cutting roller and the driven tendon cutting roller are rotatably assembled in the installation chamber, and the driving mechanism is arranged on the fixing frame to drive the driving tendon cutting roller and the driven tendon cutting roller to rotate. The utility model is characterized in that both sides of the fixing frame are symmetrically equipped with adjustment holes for the driven tendon cutting roller to pass through at both ends. The meat tenderizer also comprises a push frame arranged in the installation chamber for pushing the driven tendon cutting roller to move along the adjustment holes, and an operating component for pushing the push frame, with one end located on the side of the push frame away from the driven tendon cutting roller and the other end passing through the fixing frame. The above technical solution has the advantage of adjusting the gap distance between the driving and driven tendon cutting rollers, so that the meat tenderizer can adapt to different thicknesses of meat pieces, without the need to cut the meat pieces into the same thickness to cut the tendons and tenderize the meat pieces.
