Lid used in a device for making kefir using kefir grains
A lid that is used in household devices for preparing kefir using kefir grains. The lid comprises a rotating means located in the lid, a stirring rod connected to the rotating means, a container with holes for placing grains for fermentation within it and equipped with a cap and mounted on the stirring rod, and a control unit connected to the rotating means. The lid assembly is characterized in that the container with holes is affixed on the stirring rod in such a way that the axis of symmetry of the container is not aligned with the vertical axis of rotation of the stirring rod.
METHOD FOR MAKING LIQUID OR SEMI-LIQUID FERMENTED MILK PRODUCTS
Described is a method for making liquid and semi-liquid fermented milk products, comprising the following steps: a) placing a milk-based mixture in a container (3); b) subjecting the basic mixture to a heating thermal treatment; c) adding lactic bacterial strains to the basic mixture according to a concentration of at least 10{circumflex over ( )}8 CFU/ml of basic mixture, and subjecting the basic mixture to which lactic bacterial strains were added to a thermal treatment for a predetermined time; d) stirring the mixture to which lactic bacterial strains were added in order to break a coagulated mass which formed in the mixture to which lactic bacterial strains were added, to make the liquid and semi-liquid milk products.
YOGURT MAKER AND METHOD FOR USING THE SAME
The present disclosure discloses a yogurt maker and its method of use for using the same. A vertical upwardly extending mixing container protrusion is set at the bottom of the mixing container of the yogurt maker and a mixing head is detachably sleeved on the mixing container protrusion, and the rotation of the mixing head is driven by a power device so that the mixing head can mix the mixture in the mixing container well. At the same time, a temperature sensor is installed at the bottom of the mixing container to monitor the temperature of the mixing container, so as to ensure constant heat preservation conditions in different environments. The mixing device can be detached easily, which eliminates hygienic blind spots and ensures that the yogurt maker can be cleaned easily after making yogurt.
METHOD AND APPARATUS FOR MAKING YOGURT
A method including sonication of a yogurt culture produces desirable texture and yield characteristics. An apparatus for producing yogurt from milk includes a sonicator for controlling texture.
Automated yogurt maker
An automated yogurt maker includes: a first container configured to receive milk; a first heating element configured to heat the milk to a scalding temperature; a capsule holder configured to hold a yogurt starter capsule; a nozzle configured to direct the milk into the yogurt starter capsule; a pump configured to pump the milk from the first container to the nozzle so that the milk flows through the nozzle into the yogurt starter capsule and mixes with the yogurt starter; a second container configured to receive the mixture of the milk and the yogurt starter; and a second heating element configured to maintain the temperature of the mixture at an incubation temperature while the mixture incubates to produce yogurt.
METHOD AND SYSTEM FOR FORMULATING A REQUIRED COMPOSITION FROM AT LEAST ONE INGREDIENT OF VARIABLE COMPOSITION
A method and system for formulating a required composition in order to produce a determined product from the supply of at least one ingredient that has a time-varying composition; the method has the steps of: (a) pre-establishing a final profile of components of the required composition; (b) providing a first ingredient and a second ingredient, where at least one of them has a time-varying composition; (c) determining an initial profile of components of the first ingredient and the second ingredient; (d) estimating an amount of the first ingredient and the second ingredient to be supplied; (e) supplying, simultaneously or sequentially, the estimated amount of the first ingredient and the second ingredient, and simultaneously, in-line and/or in real-time, generating a real-time profile of components of the amount of the first ingredient and the second ingredient as they are being supplied; (f) determining in-line or in real-time whether the amount of the first ingredient and/or the amount of the second ingredient has changed its composition when comparing the profiles; (g) adjusting the estimate of the amount of the first ingredient and/or of the second ingredient being supplied, if any of them has changed its composition; and repeating steps (e) to (g) until the required composition is achieved.

Cultured Dairy Products and Method of Preparation
A method for preparing a cultured dairy product comprising: blending water, ultra-filtered milk and other ingredients to establish a dairy base, fermenting the dairy base to establish an intermediate yogurt product, adding a fat into the intermediate yogurt product, and blending the fat and intermediate yogurt product to produce a high fat and low carb yogurt. The amount of lactose in the dairy base is minimal, basically just enough to enable fermentation. On the other hand, instead of maintaining a low fat level, the fat, preferably a milk fat from butter, is added to increase the overall fat content to establish an overall high fat, low carbohydrate finished yogurt product.
Complete yogurt maker appliance
A yogurt maker device comprises an outer shell to house a yogurt vessel that receives milk and a culture container that receives yogurt culture. A processor within the outer shell controls a heating element to boil milk within the yogurt vessel using a temperature sensor as feedback and for maintaining a predefined boiling temperature for a predefined period of boiling time and a stirring device to continuously stir boiling milk within the yogurt vessel while boiling and also while cooling to a cooling predefined temperature until fermentation temperature is reached. The processor also controls a culture container base holding the culture container and having a motor to automatically pour the yogurt culture when the fermentation temperature is reached. Finally, a cooling mechanism automatically provides cooling to contents of the yogurt vessel once fermentation is complete.
