EMULSIONS OF BIOACTIVE LIPOPHILIC COMPOUNDS INCLUDING OILS
The present application relates to compositions corn-sing a bioactive lipophilic compound, an oil and at least one solubilizing agent that is a compound of Formula (I), to emulsions comprising such compositions and to uses thereof. The present application also relates to methods of preparing such emulsions. The methods comprise heating such compositions to form a homogeneous melt and combining the homogeneous melt with water to obtain the emulsion.
Hardstock fat composition
A hardstock fat composition for use in making edible water-in-oil emulsions such as spreads, in particular (but not exclusively) when produced using the hardstock in the form of micronized fat powder, and process to use such hardstock fat to make a fat slurry and to make a water-in-oil emulsion (like spreads) using such hardstock fat. The hardstock fat may give improved properties of the resulting emulsion.
Method of Preparing a Randomly Interesterified Fat Product
A method of preparing an edible randomly interesterified fat product comprises the steps of: a) providing a fat composition comprising from 0.5% to 25% by weight of free fatty acids; and b) reacting enzymatically the fat composition provided in step a) with from 0.5% to 10% by weight of a polyol compound based on the fat composition, wherein the weight ratio of free fatty acid in the fat composition to the polyol composition is from 0.1 to 20.0; and wherein the obtained randomly interesterified fat product has less than 1.0% by weight of free fatty acids.
