Self-optimizing, adaptive industrial chocolate production system, and corresponding method thereof

Proposed is a self-optimizing, adaptive industrial chocolate production system (1), and method thereof. The system comprising a chocolate mass processing line (11) with at least dosing means (2), one or more mixers (3), one or more refiners (4), one or more conches (5), and liquefying and tempering means (6). Appropriate inter-dependent operational parameters of the various devices (2/3/4/5/6) are measured by real-time measuring devices and transmitted to a controller device 12. The measured inter-dependent operational parameters are mutually optimized and dynamically adjusted providing an optimal operation at least in terms of the characteristics of the end chocolate mass 7 and/or throughputs of the chocolate production line 11 and/or other operation conditions as energy consumption.

The invention relates to a method and a device for demolding at least one confectionary item (2), which is to be demolded from a cavity (4) of a casting mold (3) upside down by means of a gripping arrangement (5), wherein the gripping arrangement (5) has at least one suction element (6) with which the substantially flat base (32) of the confectionary item, which base is facing upwards, is suctioned, wherein the confectionary item (2), where it is transferred upside down by a switching off of the negative pressure, wherein before or after the suction element (6) has suctioned the base (32) of the confectionery item (2), a loosening movement is generated which introduces alternating forces into the confectionery item (2) which generate deformations in the confectionery item (2) which act right up to the outer border layer of said confectionery item and reduce the adhesive force of said confectionery item at the contact surface of the cavity (4) and at least partially release the adhesive force, and wherein the confectionery item (2) is then completely removed from the cavity (4) by the suction element (6).

A chocolate mold is provided for the creation of a layered chocolate body. The chocolate mold has a tubular shell connected to a primary platform. A food-safe platform is formed within the tubular shell and atop the primary platform, serving as a base for the layered chocolate body. A shaft is connected to the food-safe platform, with the layered chocolate body being formed about the shaft. A lid and handle are attached to the shaft atop the tubular shell. An elongated slit allows the tubular shell to easily be peeled away from the layered chocolate body, while clamping mechanisms seal the tubular shell during molding of the layered chocolate body. A tilt mechanism is used to angle the primary platform and create angled chocolate layers which are visually appealing. The layered chocolate body is formed by sequentially pouring and solidifying layers of chocolate to the tubular shell.

The invention relates to the production of confectionary articles with a shaped ornament or with a single-colored or multi-colored embossed design on one of the surfaces of the article. The main characteristic of the present invention consists in that a prepared chocolate/chocolate-like mass is fed into a full-scale mold in a dispersed dropping state through a nozzle at a drip rate ensuring plastic deformation of the drops as the drops slow down. The technical result of using the proposed invention is an increase in the quality of confectionary articles with a three-dimensional embossed decorative design.

The method produces a composition containing a -form fat and/or oil whose particles have a plate-like shape.
