APPLICATOR FOR APPLYING LIQUID COATINGS
The present invention relates to an apparatus for applying stripes of liquid coating on a confectionery product comprising a rotatable applicator for liquid coating, at least one shield positioned above the rotatable applicator to collect coating material not applied onto the product, a manifold for providing the rotatable applicator with the coating material in a liquid form, and wherein the rotatable applicator is arranged to spin about an axis which is orientated from horizontal and up to 30 deg of deviation from horizontal, and wherein the applicator has openings along it's circumference through which coating material may be projected upon spinning of the applicator. The invention also relates to a method for decorating confectionery products and to the products.
CONFECTIONERY PRODUCT AND MULTILAYER CONFECTIONARY ITEM
A confectionery product includes: a center of a paste confectionary material including a semisolid fondant wherein a quantity of liquid syrup is less than a quantity of solid sugar crystals, and at least one compound able to hydrolyze sucrose to glucose and fructose; an intermediate layer of chewy candy material; and a layer of amorphous candy material. Also disclosed is a related multilayer confectionary item including such product.
Comestible products, apparatus for comestible production
The apparatus (100) includes a die head (118) for extruding a main comestible material to form an extrudate body. A plurality of nozzles (160, FIG. 7) is located within the die head for introducing a comestible fluid into the extrudate body to form a plurality of filled capillaries. A control system (182) is capable of selectively connecting at least one of the nozzles to any one of at least two different fluid filling sources (150A, 15 OB). The control system may be capable of connecting each of the nozzles independently to different fluid sources or the nozzles may be arranged into two or more groups of flu idly interconnected nozzles that can each be independently switched between different fluid sources. The apparatus can be used to form products in which the fillings in the capillaries are varied or in which an image is formed in cross section. The apparatus can also be used to switch production between products having different fillings without stopping extrusion.
Method for preparing a multilayer confectionary product
Disclosed is a method for preparing a multilayer confectionary product including a paste confectionery center, surrounded by an intermediate layer of chewy candy material, surrounded in turn by a layer of amorphous candy material, to the multilayer confectionery product obtained by the process and to an apparatus for producing the multilayer confectionary product. The multilayer confectionary product can be further coated with a hard coating.
Confectionery processing machine and manufacturing process
A confectionery processing machine has a hopper attached to a dispensing unit. The dispensing unit comprises a plurality of co-operating piston and nozzles. The hopper is arranged to supply an edible material to the plurality of co-operating piston and nozzles. The dispensing unit is arranged in order to dispense the edible material from the plurality of co-operating piston and nozzles. The confectionery processing machine is improved by providing the hopper with at least two separate compartments. Here, each compartment separately provides edible material to a portion of the plurality of pistons. Consequently, a more flexible confectionery processing machine is provided because all the plurality of piston and nozzles are not provided from the same compartment.
Film-coating apparatus
The invention relates to a film-coating apparatus (1) for coating foods with a coating material, more particularly with sugar solution or with a solution based on sugar substitute, having a housing (2), a coating chamber (9) within the housing (2), in which a delivery means (6) for delivering the coating material can be placed, and having a circulating belt (3) which in sections forms part of the walls of the coating chamber (9) and is provided as a bearing surface for the foods. The invention relates more particularly to a film-coating apparatus in which the belt (3) has a multiplicity of gas ports (30) which are designed for the accelerated solidification of the coating material.
High temperature food heating device
A high temperature food heating device includes a high temperature heating tank composed of three tanks, which are a main tank, a front reserve tank and a reserve tank, each of the front and rear reserve tanks has a first storage part having an opening at the upper part and a second storage part communicating with the first storage part at the lower part of the first storage part and having an opening at the upper part. In the high temperature food heating device, a communication chamber for communicating between a water surface of each of the second storage parts of the front reserve tank and the rear reserve tank and a water surface of the main tank and storing a liquid or a gas inside is provided, and a high pressure gas or a pressurized liquid is supplied from a high pressure fluid supply section into the communication chamber.
High temperature food heating device
A high temperature food heating device includes a high temperature heating tank composed of three tanks, which are a main tank, a front reserve tank and a reserve tank, each of the front and rear reserve tanks has a first storage part having an opening at the upper part and a second storage part communicating with the first storage part at the lower part of the first storage part and having an opening at the upper part. In the high temperature food heating device, a communication chamber for communicating between a water surface of each of the second storage parts of the front reserve tank and the rear reserve tank and a water surface of the main tank and storing a liquid or a gas inside is provided, and a high pressure gas or a pressurized liquid is supplied from a high pressure fluid supply section into the communication chamber.
ADJUSTABLE BREADING MACHINE AND METHOD OF OPERATION
An adjustable breading machine for applying a coating material onto a food product, the machine includes a frame and a breading chamber enclosure through which the food product travels along the food path to receive a coating material. The adjustable breading machine may also include a hopper fixedly connected to the frame to deliver a coating material into the breading chamber enclosure. At least partially within the breading chamber enclosure is a main conveyor and an outfeed conveyor. In a first mode of operation, the outfeed conveyor lies in the food path and receives food product from the main conveyor. The adjustable breading machine includes a drum assembly operatively disposed above the outfeed conveyor having a rotatable drum for transporting food product and coating material to the outfeed conveyor. The adjustable breading machine also includes a drum adjustment assembly for moving the drum assembly between modes of operation.
CONFECTIONERY MASS DOSING UNIT INCLUDING A LOCKING VALVE AND A DOSING VALVE
An apparatus (1) for dosing a confectionery mass includes a plurality of confectionery mass dosing units (2) being arranged side-by-side. Each of the confectionery mass dosing units (2) includes a locking valve (18), a dosing valve (22) and an outlet opening (26). The outlet opening (26) serves to dispense a dosing quantity of confectionery mass from the confectionery mass dosing unit (2). The dosing valve (22) serves to adjust the dosing quantity. The locking valve (18) being an addition to the dosing valve (22) serves for alternate opening and closing, wherein no confectionery mass exits from the outlet opening (26) when the locking valve (18) is closed.
