The invention relates to a composition for maintaining or improving the quality of processed meat, said composition comprising on a dry matter basis: between 20 and 75% w/w acid equivalent of a salt of an organic acid component selected from the group of acetate, lactate and combinations thereof; between 10 and 75% w/w of plasma protein; and between 0.5 and 5% w/w acid equivalent of ascorbate; wherein the composition when diluted with distilled water of 20° C. to a dry matter content of 10% w/w has a pH in the range of 5.0 to 9.0.

This composition can replace conventional stabilizers, acid regulators and anti-oxidants without deteriorating the quality of the processed meat. Furthermore, this composition can be composed of “label friendly” ingredients, with a more attractive consumer perception.

The invention also relates to a method for the preparation of the aforementioned meat treatment composition.

IMPROVED METHOD FOR PRODUCING HIGH-QUALITY BLOOD MEAL

The invention relates to a method for producing blood meal comprising the subsequent steps of (i) providing an aqueous mixture comprising raw blood, preferably having a solid content of between about 5 and about 18 wt %, and (ii) increasing the solid content of the mixture to obtain a mixture having a solid content of about 20 wt % or higher, preferably between about 20-80 wt % and (iii) concurrently drying and grinding the resultant mixture in an air turbulence mill, to obtain blood meal having an average particle size (d50) between 20 m and 0.7 mm, a d90 of below 1 mm as measured with laser diffraction using a dry powder Beckman Coulter particle size analyzer, and an ileal digestibility of about 85% or higher preferably of about 87% or higher, and more preferably about 90% or higher. The invention furthermore relates to a coagulated blood meal product with high ileal digestibility.

IMPROVED METHOD FOR PRODUCING HIGH-QUALITY BLOOD MEAL

REDUCTANT TREATMENT METHODS FOR FOOD PRODUCT PRECURSORS

Reductants may reduce microbial bioburden in protein solutions. Reducing bioburden can increase shelf life or ensure the safety of food or pharmaceutical products. The use of reductants to reduce bioburden in producing non-animal-based food products may also have additional advantages. For example, chroma and hue angle may be improved so that the non-animal-based food products may closely resemble the appearance of animal-based food products.
