METHOD OF PREPARING AND PACKAGING A FOOD PRODUCT
One or more methods are disclosed to provide for the preparation of a food product that can be quickly cooked, while exhibiting flavors, textures, and colors of more traditional and time consuming cooking methods. The method produces a food product with the full flavor profile of barbeque, with the ease of a ready-made meal. The preparation prior to packaging facilitates a Maillard reaction and carmelization of the food product. The method can include marinating the food product, searing an outside portion of the food product, smoking the food product, vacuum sealing and then cooking the food product using a sous vide method. The prepared food product can then be easily heated by the end user for consumption.
SYSTEM AND PROCESS FOR MAKING SHAPED MEAT PRODUCTS REFERENCE TO RELATED APPLICATIONS
A system and a process for preparing a shaped-meat product are disclosed. The system includes an oven, a rack insertable into the oven, and apertured tubes onto which strips of meat are spirally wound. The tubes are arranged horizontally in the oven. The strips of meat are cooked and dehydrated using heated air for 3 to 4½ hours at a temperature ranging about 135 to 170° F.

Fire braising process for meat
A fire searing process for meat comprises cooking meat in an oven and then at least crust-freezing the meat in a freezer. The oven has a temperature of at least 1500° F., and the meat is cooked in the oven for approximately 10 seconds to 3 minutes. The meat is cooked to a depth of approximately 0.25 to 25% of the meat extending into an inner surface of the meat from an outer surface of the meat to form a crust-like portion proximate the outer surface of the meat. The meat is then at least crust-frozen in a freezer having a temperature of approximately −35 to 0° F. for approximately 1 to 6 minutes. The freezer prevents the meat from being further cooked to preserve the crust-like portion proximate the outer surface of the meat.
METHOD AND SYSTEM FOR PROCESSING READY-TO-EAT BACON WITH PAN FRIED BACON CHARACTERISTICS
Methods and systems for processing ready-to-eat bacon with pan-fried bacon characteristics comprising a combination of cooking in a microwave oven and finishing in a searing unit.
COMPOSITION AND PROCESS FOR LONG TERM PRESERVATION OF FOOD
Provided is a method of fresh preserving meat products by controlling the intake process of the packaged meat, storing the meat in a temperature-controlled environment the keeps the meat at or near the freezing point of the meat without forming or growing ice crystals, and shipping the meat at a time where the seasonal price of the meat is favorable.
Meat aging chamber and system utilizing a communications network
A meat aging chamber suitable for residential or portable use is provided. An aging apparatus comprises a refrigerated aging cabinet having a climate created by environmental apparatus. A server in a cloud resource communicates with a control circuit in the aging apparatus and with a portable interactive device. In a setup mode the portable interactive device communicates with a control circuit in the aging apparatus via a communications interface to identify the user to the control circuit. In an operating mode the communications interface enables communication between the cloud resource and the control circuit. A sensor module provides current values to the cloud resource for controlling operation in accordance with a software program embodying the aging protocol. The cloud resource can inform the smartphone of aging progress and alarm conditions. Physical features enable embodying the functions of a commercial aging chamber in a residential sized unit.
Dry aging system using oxygen
Provided is a dry aging system using oxygen in which a separate dry-aging room is provided in a refrigerating compartment, and a mixed gas using oxygen is supplied into the dry-aging room so as to solve a blacking and browning phenomenon of a meat surface, which is led to an increase in loss rate and an increase in edible meat cost, which are disadvantages of existing dry-aging, thereby allowing the meat surface to be maintained in a bright red color through meat color fixation, minimizing the occurrence of the blacking and browning phenomenon to reduce the loss rate of the edible meat, and supplying flavorful dry-aged meat at a more reasonable price. Also, the blacking and browning phenomenon occurring on the generally dry-aged meat may be significantly reduced to produce aesthetically and tastefully very superior dry-aged meat.
METHOD OF MAKING BACON STYLE SLICED PORK
A method of making bacon styled sliced pork by cutting a layer of muscle and fat from an outer surface of a pork ham. After smoking and curing the layer, the layer is rolled out and cut into blocks. The blocks are then fed into a slicing machine to make slices of bacon style pork.
Method and apparatus for drying food item
A method and apparatus is provided for curing a food item utilizing a vacuum environmental profile and a temperature environmental profile using convection heating. An apparatus including a closed environmental control system having an internal sealable curing chamber is provided. A vacuum pump can be communicably connected to the internal sealable curing chamber and can be used to create a vacuum in the internal sealable curing chamber. The vacuum pump and internal sealable chamber can maintain the vacuum for a time sufficient to achieve a predetermined moisture content for a selected food item. The technology as disclosed can include a closed heat transfer system directing heated fluid into the internal sealable curing chamber by convection.
