An example peanut butter snack food includes about 35 wt% to about 45 wt% binder based on a total weight of the peanut butter snack food and about 55 wt% to about 65 wt% particulates based on the total weight of the peanut butter snack food. The binder includes peanut butter and a second binder. The peanut butter is present in an amount within the range of about 10 wt% to about 20 wt% based on the total weight of the peanut butter snack food. The second binder being present in an amount within the range of about 15 wt% to about 30 wt% based on the total weight of the peanut butter snack food.

Food compositions containing added honey proteins
Food composition supplemented with one or more honey proteins provide additional protein without detracting from flavor or mouthfeel and may also possess cytostimulatory properties. The honey proteins may be royal jelly major proteins (RJMP) such as those from the western honeybee Apis mellifera. The honey proteins can be created by expression of recombinant DNA in a yeast or bacterium. The honey protein is selected based on physical properties of the protein and of the food composition to reduce negative mouthfeel and flavor characteristics that may be caused by added protein. Multiple different proteins may be added in a specified ratio to create a desired texture or cytostimulatory property.

An enzymatic glycerolysis method to convert an oil having a first monoacylgycerol (MAG), diacylglycerol (DAG), triacylglycerol (TAG) and fatty acid composition into a structured fat is provided. The method comprising the steps of exposing the oil to glycerol in the presence of an enzyme catalyst under conditions sufficient to convert the triacylglycerols to mono- and/or di-acylglycerols; and cooling the oil to yield the structured fat having a second monoacylgycerol, diacylglycerol, triacylglycerol and fatty acid composition, wherein the fatty acid composition of the oil is essentially retained in the structured fat. The structured fat provides a healthy substitute for saturated fats in foods.
