A COMPOSITION FOR IMPROVING UNPLEASANT TASTE CAUSED BY HIGH-INTENSITY SWEETENER

The present invention can provide a composition capable of improving an unpleasant taste caused by high-intensity sweeteners, in which the yeast odor is improved and/or the masking effect of the unpleasant taste caused by high-intensity sweeteners is sufficiently performed.

A composition for improving the unpleasant taste caused by high-intensity sweeteners, comprising an extract of yeast cell walls degraded by a cell wall lytic enzyme, in which the degraded extract contains 50 mass% or more of carbohydrates to the dry mass of the degraded extract.

UMAMI-ENHANCING COMPOSITION AND METHOD FOR MANUFACTURING SAME, SEASONING OR EXTRACT AND METHOD FOR MANUFACTURING SAME, OIL AND FAT COMPOSITION FOR COOKING WITH HEAT AND METHOD FOR MANUFACTURING SAME, AND METHOD FOR ENHANCING UMAMI OF FOOD PRODUCT

To provide an edible ingredient having an exceptional effect for enhancing umami.

An umami-enhancing composition having an oxidation treatment product of a palm-based oil and fat as an active ingredient. The umami-enhancing composition can be formulated through a manufacturing method including a step in which a palm-based oil and fat in which the total α-carotene and β-carotene content is 30 mass ppm or more and 2000 mass ppm or less is subjected to an oxidation treatment such that the peroxide value reaches 3 or greater and 250 or lower. The umami-enhancing composition is optimally used as a food-product ingredient, etc., for: manufacturing a seasoning, an extract, or an oil and fat composition for cooking with heat; or enhancing the umami of a food product.

The subject of this invention is embodied in a piece of edible paper that has an affirmation written on it (an “edible affirmation”). This edible affirmation can be used as a tool for self-improvement. In general, an edible affirmation provides a way to partake a word or phrase for the purpose of enhancing the mind, body, and spirit. The user can practice being an expression of the affirmation through focused attention and/or meditation as the edible affirmation dissolves in the mouth and continues for a time thereafter.

UMAMI-ENHANCING COMPOSITION, SEASONING OR EXTRACT, METHOD FOR MANUFACTURING UMAMI-ENHANCING COMPOSITION, METHOD FOR MANUFACTURING SEASONING OR EXTRACT, AND METHOD FOR ENHANCING UMAMI OF FOOD PRODUCT

To provide an edible ingredient having an exceptional effect for enhancing umami.

An umami-enhancing composition having a carotenoid degradation product as an active ingredient. The umami-enhancing composition can be formulated through a manufacturing method that includes a step for adding a carotenoid to an edible oil and fat, and a step for degrading the carotenoid in the edible oil and fat. The carotenoid degradation product is preferably a degradation product of one or more selected from the group consisting of carotenes and xanthophylls. The umami-enhancing composition is optimally used as a food-product ingredient, etc., for manufacturing a seasoning or extract or for enhancing the umami of a food product.

PROCESS FOR THE PREPARATION OF HEAT TREATED CEREAL BASED FOOD PRODUCTS

A process prepares heat treated cereal based food products enriched in certain flavours, and a heat treated cereal based food product is obtainable by this process. Additionally, a process generates a pre-reacted fraction, and a pre-reacted fraction is obtainable by this process. The pre-reacted fraction can be used to prepare heat treated cereal based food products.

METHOD FOR INCREASING YIELD OF AMADORI REARRANGEMENT PRODUCTS BASED ON INHIBITION MECHANISM OF TEA POLYPHENOLS AND DEOXYOSONES TO DEGRADATION OF AMADORI REARRANGEMENT PRODUCTS

A method for increasing the yield of Amadori rearrangement products (ARP) based on a mechanism in which addition of tea polyphenols to deoxyosones inhibits degradation of the ARP. The method includes the following steps: dissolving and mixing amino acid, sugar and tea polyphenol in water, and adjusting a pH value; placing the obtained mixed solution in a reaction flask, and heating the mixed solution at a constant temperature in a water bath to obtain a reaction solution; and performing vacuum decompression dehydration reaction at a constant temperature; after the reaction is completed, using an ice bath to terminate the reaction to obtain a solid reactant, and redissolving the solid reactant in water to obtain an ARP solution. This method promotes the formation of ARP and inhibits degradation of ARP, so that ARP is accumulated and enriched in a large amount (80% and above yield).

PLANT-BASED CHICKEN FLAVORING AGENT COMPOSITION

Techniques to mimic chicken flavor are disclosed. A plant-based chicken flavoring agent includes a Prunus persica (Rosaceae family) component and a Zea mays (Poaceae family) component. The Prunus persica component may include an aqueous extract of peach, and the Zea mays component may include an aqueous extract of sweetcorn. A ratio of the Prunus persica component to the Zea mays component in the flavoring agent is one to an amount within a range of 1.8 and 2.2. The agent may be added to a food product to mask a flavor of the food product, to provide chicken-like flavoring, or both.

Process for the preparation of heat treated cereal based food products

The present invention relates to a new process to prepare heat treated cereal based food products enriched in certain flavours and to the heat treated cereal based food products obtainable by this process. Additionally, the present invention relates to a process to generate a pre-reacted fraction and to the pre-reacted fraction itself. Such pre-reacted fraction can be used in the process of the invention to prepare heat treated cereal based food products.

The present invention relates to the field of perfumery, that is, the art or process of making a fragrant substance be it natural or synthetic.

The present invention discloses a method of obtaining a better reconstituted absolute NNA+ (Near Natural Absolute) comprising the steps of: a) mixing a synthetic absolute or raw reconstituted absolute with an alcohol; b) freezing the solution of step (a); c) filtering the solution of step (b) through a propylene cloth to separate out non-alcohol soluble substance and to obtain a crystal clear percolate; d) transferring the percolate obtained from step (c) to an alcohol extraction unit, where said solution is boiled in a glass vessel at high temperature and vacuum to separate the alcohol; e) allowing the solution of step (d) to stand for maturation of the reconstituted absolute NNA+.
