A COMPOSITION SUITABLE FOR THE REPLACEMENT OF GLUCOSE-SYRUP
The invention relates to a glucose(-containing) syrup replacement composition for use in food applications, such as in bakery, beverages, ice cream, confectionery and the like. The glucose(-containing) syrup replacement composition comprises at least 80 wt % of maltodextrin having a dextrose equivalence (DE) of from 15 to 20 and up to 20 wt % of sorbitol and glycerol. The invention also covers the use of the composition in a food product to replace at least partially or completely nutritive mono- and disaccharides having an energy density of 4 kcal/g, preferably to replace at least partially or completely glucose, sucrose and/or fructose, generally in the form of syrups.
Glucosyl stevia composition
Glucosyl Stevia compositions are prepared from steviol glycosides of Stevia rebaudiana Bertoni. The glucosylation was performed by cyclodextrin glucanotransferase using the starch as source of glucose residues. The compositions mainly comprise glucosyl derivatives with superior taste characteristics and can be used as sweetness enhancers, flavor enhancers and sweeteners in foods, beverages, cosmetics and pharmaceuticals.
COMPOSITION FOR MAKING BOUILLONS
The objective of the current invention is to provide a composition that can be used for making bouillons, soups and gravies, and that is free from kitchen salt. Such composition has now been developed, preferably in the form of a solid or pasty cube, for preparing a bouillon, to which no kitchen salt has been added, and which contains a specific ratio of native starch and maltodextrin and/or glucose syrup. This ratio between these ingredients leads to a good quality composition that can be prepared in the same way as regular compositions for making bouillons that do contain kitchen salt.
REGENERATION OF WEAK BASE ANION EXCHANGE RESINS
The present invention relates generally to regeneration of weak base anion exchange resins and more particularly to regeneration using low concentrations of sodium hydroxide and/or sodium carbonate to remove ionic contaminants from the resins.
COMPOSITIONS COMPRISING MOGROSIDES, STEVIOL GLYCOSIDES AND GLYCOSYLATED DERIVATIVES THEREOF AND METHODS OF ENHANCING THE MOUTHFEEL OR SWEETNESS OF CONSUMABLES
The invention describes compositions comprising glycosylated mogroside(s) or glycosylated swingle extracts and methods of enhancing the mouthfeel, sweetness or flavor of consumable products.
PRODUCTS FOR ORAL CONSUMPTION WITH REDUCED SUGAR CONTENT
A product for oral consumption, such as a food, comprising at least one thaumatin selected from the group consisting of thaumatin I and thaumatin II and at least one sugar selected from the group consisting of sucrose, glucose, and fructose in a mass ratio of said thaumatin:to said sugar of from 1:2,000 to 1:80,000.
