COMPOUNDS, COMPOSITIONS, AND METHODS FOR MODULATING SWEET TASTE
The present disclosure provides edible compositions comprising a flavor-grade sweet taste modulator or a combination of flavor-grade sweet taste modulators or a flavor-grade bitter taste blocker or a combination of flavor-grade bitter taste blockers of the present disclosure, food products comprising such edible compositions and methods of preparing such food products. The present disclosure also provides methods of reducing the amount of sugar in a food product, methods of reducing the caloric intake in a diet, and methods of enhancing sweet taste or blocking a bitter taste in a food product.
Odor masking formulations for natural compounds
The invention discloses odor masking formulations for stench natural compounds, selected from the extracts, fraction and pure phytochemicals that are produced in combination with a natural or synthetic hydrocolloid polymer gum(s). The invention further discloses novel process of producing the odor and taste masking formulations. The invention also discloses taste masking formulations of valerian extracts with no characteristic stench odor & or negligible stench odor in combination with natural hydrocolloid gum such as guar gum, acacia or other polymers. The invention further discloses method of reducing insomnia, anxiety, Attention Deficit Disorder (ADD), Chronic Fatigue Syndrome (CFS) using odor masking formulation of the current invention. Importantly, the said odor masked formulation of the present disclosure helps in improving sleep cycle and helps in efficient functioning of brain.

The present disclosure generally relates to various formulations and uses of the compound: 3-(1-((3,5-dimethylisoxazol-4-yl)methyl)-1H-pyrazol-4-yl)-1-(3-hydroxybenzyl)-imidazolidine-2,4-dione, which is also referred to herein a “TM1” and comestibly acceptable salts thereof. In some aspects, the disclosure provides compositions that include TM1, or a comestibly acceptable salt thereof. Taste Modifying Compositions and Uses Thereof
The present disclosure generally relates to various formulations and uses of the compound: N-(heptan-4-yl)benzo[d] [1,3]dioxole-5-carboxamide, which is also referred to herein a “TM1” and comestibly acceptable salts thereof. In some aspects, the disclosure provides compositions that include TM1, or a comestibly acceptable salt thereof. In some embodiments, the compositions are ingestible compositions, including, but not limited to, packaged food and beverage products. In some other aspects, the disclosure provides methods of reducing the caloric content of a flavored article, for example, by reducing the amount of caloric sweeteners, fatty products (such as cheese). In some other aspects, the disclosure provides methods of reducing the amount of monosodium glutamate (MSG).
REDUCTION OF UNDESIRABLE TASTE NOTES IN ORAL CARE PRODUCTS
The present disclosure generally provides the use glucosylated natural steviol glycosides (GSGs) to reduce certain undesirable taste notes common to oral care products. In related aspects, the disclosure provides compositions that comprise GSGs and one or more ingredients that give rise to certain undesirable taste notes. In some embodiments, such compositions are in the form of a food product, a beverage product, or an oral care product, such as a toothpaste, a mouthwash, a tooth-whitening composition, and the like.
Use of tri- and tetra-saccharides as taste modulators
Tri- and tetra-saccharides are used in foods, beverages and other consumable products to mask or reduce the unpleasant taste of certain components also present in such products, such as the bitter taste of certain high intensity sweeteners. The organoleptic qualities of the products are thereby improved. In particular, melezitose, maltotriose and maltotetraose effectively reduce the bitterness of consumable products containing steviol glycosides such as rebaudioside A.
