The present invention discloses a novel nano-composite antibacterial material and a preparation method and an application thereof, and belongs to the technical field of preservative materials. The novel nano-composite antibacterial material disclosed by the present invention is prepared by mixing a dimethylimidazole solution, deionized water and a zinc nitrate solution to prepare a metal-organic framework carrier, compositing with nisin to form a nano antibacterial composite material, separating out from a solution in a precipitate form, centrifuging, removing a supernatant, cleaning and re-suspending with the deionized water. The novel nano-composite antibacterial material prepared by the present invention has an antibacterial effect superior to nisin having a same concentration. The present invention prominently improves an antibacterial activity and thermostability of the nisin under neutral and slightly alkaline conditions, effectively promotes antibacterial property and a usable range of the nisin, and further expands an application field of the metal-organic framework carrier.

A compound and a method for prolonging shelf life of frozen aquatic products are provided. The compound includes: 15-20 parts by weight of modified carboxymethyl chitosan, 5-12 parts by weight of pectin, 2-5 parts by weight of oleic acid, 1-3 parts by weight of yeast selenium, 1-3 parts by weight of natamycin and 2-6 parts by weight of nisin. The method includes sequentially treating a frozen aquatic product under a mixed gas and soaking the frozen aquatic product in the compound. The method can obviously slow down the degradation and oxidative denaturation of protein in aquatic products during cold storage, thus effectively maintaining the activity of protein in the aquatic products and slowing down the deterioration of the aquatic products.

The process comprises the stepwise addition of selected amino acids to a solid support; pseudoproline positioning and reopening; and cleavage of the gram-positive class II bacteriocin or the variant thereof from the solid support to provide a linear gram-positive class II bacteriocin or variant thereof; and in situ disulfide bond formation. Various applications and uses of the synthetic bacteriocins are also disclosed. The synthetic process can also be used to synthesize variants of bacteriocins by the selective substitution of one or more amino acids and/or additions and/or deletions of selected amino acids.
