The invention discloses taste masking formulations for bitter natural compounds, selected from the extracts, fraction and pure phytochemicals produced in combination with a synthetic polymer or a natural polymer. The invention also relates to the novel process of producing the taste masking formulations. The invention also relates to taste masking formulations of Bacopa extracts with no bitter taste or negligible bitter taste in combination with synthetic polymers such as Eudragit or natural polymers such as Shellac.

The invention also discloses taste masking formulations of valerian extracts with no characteristic stench odor & or negligible stench odor in combination with natural hydrocolloid gum such as guar gum, acacia or other polymers. The invention further discloses method of reducing insomnia, anxiety, Attention Deficit Disorder (ADD), Chronic Fatigue Syndrome (CFS) using odor masking formulation of the current invention. Importantly, the said odor masked formulation of the present disclosure helps in improving sleep cycle and helps in efficient functioning of brain.

More specifically, fermented noni prepared by inoculating complex lactic acid bacteria containing 7 types of lactic acid bacteria comprises scopoletin, deacetylasperulosidic acid, and asperulosidic acid, which are produced by bioconversion, and a food composition for preventing and ameliorating diabetes, comprising fermented noni containing all of the three components may exhibit an effect of preventing and ameliorating diabetes by lowering blood glucose.

Provided is a method for producing a noodle-like fried vegetable food product which is effectively prevented from damage such as cracking and breaking in a packaging step in the process of production of the noodle-like fried vegetable or during transportation and which, when reconstituted with hot water, has the texture of the original vegetable and can be eaten like noodles; and such a noodle-like fried vegetable food product. A method for producing a noodle-like fried vegetable food product according to one embodiment comprises forming a noodle-like vegetable by cutting a vegetable into a noodle-like shape; providing an oil frying container provided with a retainer; placing the noodle-like vegetable in the retainer of the oil frying container to form a mass of the noodle-like vegetable; and frying the noodle-like vegetable mass placed in the retainer with oil. The method further comprises compressing the noodle-like vegetable mass in the middle of the frying of the noodle-like vegetable mass with oil or immediately after the frying with oil.

The object is solved by an oil-in-water emulsion composition containing solid particles, a predefined surfactant, an oil phase component, and an aqueous phase component, wherein the oil phase component includes a predefined oil component and the solid particles are distributed along the interface between the oil phase component and the aqueous phase component.
