Disclosed herein is an isolated strain of Lactobacillus acidophilus TW01, which is deposited at Deutsche Sammlung von Mikroorganismen und Zellkulturen GmbH under an accession number DSM 33990. Also disclosed herein are use of the isolated strain of Lactobacillus acidophilus TW01 for alleviating an inflammation-related disorder and that for improving gut health.

A food composition and pharmaceutical composition with strains of lactic acid bacteria for modulating blood glucose are provided, comprising an isolated lactic acid bacteria strain. The isolated lactic acid bacteria strain is at least one selected from a group including a GL-104 strain of Lactobacillus reuteri (CCTCC NO: M209138), an AP-32 strain of Lactobacillus salivarius subsp. salicinius (CCTCC NO: M2011127), a TYCA06 strain of Lactobacillus acidophilus (CGMCC No: 15210), and an MH-68 strain of Lactobacillus johnsonii (CCTCC NO: M2011128), or a combination thereof.

A probiotic composition comprised of a probiotic, a prebiotic, a complex-starch reducing enzyme, an enzymatic co-factor, and a pH modifier. The probiotic composition facilitates the creation of a biofilm within the GI tract of poultry that outcompetes and excludes pathogens. The probiotic composition can be incorporated into an eggwash and sprayed onto an egg, the sprayed egg developing a stable probiotic population within the GI tract of the pre-hatched chick. The probiotic composition can also be incorporated into poultry feed by applying the probiotic composition as a mash prior to pelleting. The probiotic composition can also be applied post-pelleting as a wet or dry spray, directly onto the pellets. In some instances, the probiotic composition can be added a drinking water source used by poultry as a water additive. Poultry that consume feed or water that contain the probiotic composition develop a stable probiotic population within their GI tracts.

Disclosed are probiotic formulations comprising fortified avian eggs and avian egg products such as egg powder, and methods for producing the same substantially no meat containing growth media such as MRS. The formulations may be used to supplement food that include, but are not limited to, baby foods, milk, and pet foods. Effective amounts of the fortified egg formulations comprising at least about 10.sup.9 CFU/dosage of probiotics may be used to treat health issues that include, but are not limited to, irritable bowel syndrome. The probiotic formulation may comprise bacterial strains comprising at least one of L. casei, L. rhamnosus, B. breve, Bifidobacterium longum, L. acidophilus, L. plantarum, B. bifidum, L. fermentum, L. lactis, L. paracasei, and L. salivarius.
