SLICING MACHINE AND METHOD FOR SLICING ELASTIC STRANDS IN PARTICULAR MEAT STRANDS
A slicing machine for slicing meat strands that have a cross section that varies over a longitudinal extension in large numbers and as quickly as possible into weight precise slices. In one embodiment, two meat strands are received adjacent to each other in a respective form tube and pushed against a respective separately adjustable stop plate independently from each other by a controlled longitudinal press plunger and compressed in the longitudinal direction. In addition, a cross section of the form tubes may be reduced in a first transversal direction jointly and in a second transversal direction independently from each other and thus the respective meat strand is transversally compressed to a constant cross section prior to slicing.
METHOD FOR PRESSING AND CUTTING A PRODUCT PIECE AND CUTTING MACHINE THEREFOR
In order to be able to slice product pieces, whose cross-section varies along their length, into weight-accurate slices, after pressing to a uniform product caliber it is possible to measure these realistically in terms of cross-sectional area and length and not in a pumped up state of the machine. On the one hand, this is promoted by the fact that even before pressing, a cross-press stamp is set to a forming tube cross-section oriented to the unpressed product piece. On the other hand, this is promoted by the fact that after pressing, by lowering pressing force to a substantially lower holding force, it is possible to deform back the deformed, pumped up machine parts before measuring the product caliber.

The present invention relates to a magazine turret attachment for a portioning machine for dividing a strand-like product into individual portions and a portioning machine having such a magazine turret attachment. The magazine turret attachment includes a turret base rotatable about a rotation axis which has at least one chute extending through the turret base and the chute axis of which extends at least approximately parallel to the rotation axis of the turret base; and at least one first chute module which may be reversibly arranged on the turret base in the area of the first chute and which is provided with only one chute extending through said first chute module and the chute axis of which extends coaxially to the chute axis of the first chute of the turret base and the cross-section of which corresponds at least approximately to the cross-section of the at least one chute of the turret base in order to form a first reception chute for a strand-like product.

A method is provided of pressing an irregularly shaped, elongated loaf of an elastic material into a strand with a cross-section which is constant along its longitudinal extension. The method includes disposing the loaf in a form tube of the slicing machine, and determining basic data of the loaf before pressing, the basic data comprising at least physical basic data of the loaf before pressing. The method further includes determining a target length change of the loaf between an unpressed state and a pressed state, determining a target cross-sectional change of the loaf between the unpressed state and the pressed state, and pressing the loaf in the form tube in at least one cross direction to the longitudinal extension by a cross press stamp and in a longitudinal pressing direction of the form tube by a longitudinal press stamp, according to the target length change and the target cross-sectional change.

The present invention relates to a fixed-quantity meat slicer for chilled meat, comprising: a meat loading part having a loading groove on which meat is loaded; a meat pressing part which is disposed on the upper side of the meat loading part, and which presses the meat in a vertical direction during downward movement; a horizontal driving part disposed at one side of the meat loading part so as to press the meat in a horizontal direction; a flange disposed on the other side of the meat loading part so as to form an outlet through which the meat is exposed to the outside according to the forward movement of the horizontal driving part; a restriction cover which is hinge-driven so as to open or close the outlet of the flange, and which prevents the forward movement of the meat when the outlet is closed; a cutter for cutting the meat that moves forward out of the outlet of the flange; and an input part for inputting meat cutting information.

A method for slicing meat loafs that have a cross section that varies across their longitudinal extension into accurately weighted slices, that includes the steps of bringing the loaf into a defined shape with a uniform cross section across its length inside a forming tube by pressing the loaf before it is sliced. The pressing is performed in a longitudinal direction and a transversal direction relative to the loaf in a predefined order and in particular in multiple pressing steps. The pressing may also comprise pressure relieving strokes for the purpose of reducing the force exertion for pressing, and for keeping the tissue structure of the loaf intact.

PRESSING UNIT FOR A PORTIONING MACHINE
The present invention relates to a portioning machine for dividing a strand-like product into individual portions and a method of controlling such portioning machine. The portioning machine includes a magazine turret attachment for receiving the strand-like product, a pressing unit for pressure-compacting the strand-like product at least in its longitudinal direction, and a portioning and cutting device for portioning and separating individual portions from the strand-like product. The magazine turret attachment has a base segment and a turret segment which have chute portions oriented coaxially with respect to one another for forming at least one reception chute for the strand-like product and which are rotatable about a common axis for positioning the reception chute in a cutting position; and wherein the pressing unit for pressure-compacting the strand-like product has at least one pressure ram and a counter-pressure element. The counter-pressure element is a slide element arranged between the base segment and the turret segment of the magazine turret attachment and is reversibly movable in a direction at least approximately perpendicular to the axis of rotation of the magazine turret attachment between a release position and a closure position for unblocking or closing the reception chute placed in the cutting position.
