Quick-change cutting blade assembly and method
A quick-change cutting assembly includes a base having a support surface for supporting a cutting blade, a clamping arm having a clamping surface, a spring interposed between the base and the clamping arm, and a pivot defining a pivot axis between the spring and the clamping surface that couples the clamping arm to the base. The spring biases the clamping surface toward the support surface and a cutting blade therebetween. The clamping arm is pivotable between a closed position where the clamping surface is parallel to the support surface and an open position removed from the closed position where the clamping surface is spaced further from the support surface. The cutting assembly further includes a locking pin transverse the direction of biasing action of the spring that connects the clamping arm to the base to prevent the clamping arm from pivoting relative to the base when in the closed position.

The pouch cutter includes a bottom knife (20) having a blade and a top knife (30) having a blade disposed to be adjacent to the blade of the bottom knife (20), wherein the blade of the bottom knife (20) and/or the blade of the top knife (30) are formed at an acute angle, the bottom knife (20) and the top knife (30) are cutters having a square cross section, and at least the top knife (30) from among the top knife (30) and the bottom knife (20) has a first top knife blade (35A), a second top knife blade (35B), a third top knife blade (35C), and a fourth top knife blade (35D), which are formed at an acute angle so as to be adjacent to four corners of the top knife.

Cutting wheels equipped with knife assemblies suitable for performing size reduction operations on products, methods of operating cutting wheels, knife holders for such knife assemblies, methods of manufacturing knife holders, and slicing machines capable of utilizing such cutting wheels. The knife assemblies each have a leading edge that faces a direction of rotation of the cutting wheel, a trailing edge oppositely disposed from the leading edge, and a cutting edge on the leading edge. Each knife assembly further has a knife holder having a first surface that faces the products advanced toward the cutting wheel in a feed direction and a registration surface formed in the first surface. The registration surface is defined by at least a first recessed planar surface that is recessed a distance relative to the first surface and defines with the first surface at least a first step therebetween.
