Method for the production of a polyphenolic composition from barley malt, including the fundamental steps of: grinding of the malt grains and splitting into two portions, 20% and 80%; mixing each of the two portions with water to obtain an A mixture and a B mixture, the A mixture being prepared with the 20% portion to obtain a mixture of the malt in water at a final concentration between 9.5% and 20%, the B mixture being prepared with the 80% portion to obtain a mixture of the malt in water at a final concentration between 33% and 60%; thermal cycle; separation of the liquid component from the solid component; boiling of the liquid component and the addition of hops; rapid cooling of the wort; storage; in which said thermal cycle consists of a first phase and a second phase, in which the first phase applies to the 20% portion (Mixture A) and the second phase during which Mixture B is added to Mixture A. The relative polyphenolic composition obtained according to this method is characterized by the fact that it can be in liquid, powder, dry, and lyophilized form, its use and relative beverage or beer according to the present method not obtained with fermentation methods.

LOW ALCOHOL BEER COMPRISING A GLUCONATE COMPONENT

The invention relates to a method of preparing a beer having an ethanol content of 0-3.0% ABV, in situ fermentative production of gluconate component selected from gluconic acid, gluconate, glucono delta-lactone and combinations thereof by: (a) subjecting the boiled wort to two successive fermentation steps, starting with a fermentation step that generates the gluconate component, followed by the yeast fermentation; or (b) subjecting a first boiled wort to yeast fermentation to produce the yeast fermented wort; subjecting a second boiled wort to another fermentation step to generate the gluconate component and to produce a second fermented wort; and combining the yeast fermented wort and the second fermented wort. Also disclosed is a beer having an ethanol content of 0-3.0% ABV, and produced by the method.

The invention also relates to hulupones products, suitable for beer bittering and obtainable by the method of the invention, essentially free of compounds with negative aroma, taste or haze impact upon addition of the hulupones products during the brewing process. The invention also relates to beer bittering with hulupones products, obtainable by the method of the invention, not causing an undesirable or unacceptable aroma, taste or haze impact in the bittered beer.

DEVICE FOR PREPARING AND DISPENSING RECONSTITUTED BEER

The present invention relates to a device for preparing and dispensing reconstituted beer, said device comprising: a first vessel containing a liquid concentrate for preparing a beer; a second vessel containing an alcoholic liquid; a source of water; a source of pressurized carbon dioxide; a reconstitution unit; a dispensing unit for dispensing the alcoholic beer; wherein the device is operable (i) to form a reconstituted beer comprising water from the source of water, carbon dioxide from the source of pressurized carbon dioxide, liquid concentrate from the first vessel and alcoholic liquid from the second vessel, in the reconstitution unit and (ii) to dispense the reconstituted beer from the dispensing unit; wherein the liquid concentrate in the first vessel an ethanol content of 0-1% ABV; and wherein the alcoholic liquid in the second vessel contains 12-100 wt. % ethanol and 0-88 wt. % water, ethanol and water together constituting 80-100 wt. % of the alcoholic liquid.

An alternative aspect of the invention relates to a device wherein the source of water and the source of pressurised carbon dioxide are replaced by a source of carbonated water and the device is operable to form a reconstituted beer comprising water from the source of carbonated water, liquid concentrate from the first vessel and alcoholic liquid from the second vessel in the reconstitution unit.

The aforementioned devices can be used to prepare a reconstituted beer of superior quality. The use of an essentially alcohol-free concentrate offers the advantage that the stability of the concentrate is substantially improved.

Brewing Process With Electrolytes

Methods and processes for brewing malt beverages with electrolytes are provided. In one embodiment of the invention, salts or electrolyte-yielding compounds are added in concentrations or levels greater than those currently believed to be practicable in the art. In some embodiments, the electrolyte-yielding compounds may be added in one or more stages of the brewing process. The methods presented provide flexibility in brewing malt beverages, including beer, with altered electrolyte levels, and alterations of one or more flavors.
