METHOD AND EQUIPMENT FOR THE PREPARATION OF A FOOD PRODUCT, IN PARTICULAR BERRY BASED
A method and equipment for preparation of a berry-based food product, and in particular a grape-based product, which includes the following successive steps: (a) enzymatic maceration of the berries; (b) pressing of the berries, with the separation of juice from the berries and from solid particles from the berries; (c) treating the juice from the berries by decompression, where the treatment comprises elimination of condensates formed during the decompression. Flash-decompression equipment which could be used to practice the method is also disclosed. The method and equipment also has applications in the treatment of juice from berries and in particular to the production of wine.
Compact apparatus for fermentation and pressing of wine
An apparatus for the production of red wine is provided. This compact device is suitable for home and hobby use. The fermenting wine is contained inside a single-use plastic bag, eliminating cleaning. A reusable rubber bladder is inflated periodically to squeeze the cap and disperse it. At the conclusion of the fermentation, a perforated device is inserted into the fermentation bag and pneumatic bladders are sequentially inflated to press out the wine while retaining the waste skins and seeds.
Fermentation Basket
A fermentation basket for placement in a fermentation tank during wine fermentation which includes a perforated bottom side, at least one perforated vertical side, an open top side having an upper edge with a circumference or perimeter, hoist handles, and forklift pocket legs. The basket is used in connection with a hoist bar that couples to a forklift rotating carriage and together enable manipulation and rotation of the fermentation basket, including lower the fermentation basket into, and raising out from, a fermentation tank, and rotating the fermentation basket to dump pomace after fermentation.

These nutrient-rich products can be used as natural flavour, texture and color enhancers, in addition to nutritional ingredients to fortify processed foods and consumer recipes. They can also be used as health supplements and in the cosmetic industry.

A device for holding a racking cane is disclosed herein. The device includes a base component, the base component configured to be attached to a neck of a carboy; and a clip component coupled to the base component, the clip component configured to hold a racking cane steady relative to the carboy, the clip component being adjustable relative to the base component so as to allow a position and/or angle of the racking cane to be adjusted by a user.

The invention relates to a method for devatting the grape harvest and a means for devatting a grape harvest via the pressurised injection of air or other gases in a controlled manner into self-emptying wine making vats or similar, for the purpose of emptying the grape harvest once the maceration thereof has been completed, after the homogenisation of the mixture, transferring the liquid portion to another tank and the crushed grape pulp to the press, thereby obtaining a solid phase (pomace) as a waste product which can be used to produce associated products.

A fermentation basket for suspension in a fermentation tank during wine fermentation which includes a perforated bottom side, at least one perforated vertical side, an open top side having an upper edge with a circumference or perimeter, cable or chain connecting elements disposed around said upper edge for connecting a hoist cable or chain to hoist said filtration basket, and hanging structure disposed around said upper edge for suspending said filtration basket in the interior of a fermentation tank such that said bottom side is spaced apart from the bottom of the fermentation tank.
