An indoor smoker includes a smoking chamber positioned within a cabinet, a hopper positioned within the cabinet and being configured to receive combustible material to facilitate a smoking process, a smoke generating assembly positioned below the hopper along the vertical direction and being configured to for receive the combustible material and generate a flow of smoke that is directed into the smoking chamber, and a waste container positioned below the smoke generating assembly and being configured to receive and extinguish the combustible material. A volume ratio is defined as a waste container volume to a hopper volume and is between about 2:1 and 6:1.

Oven with specific catalyst, method

An oven includes a cooking compartment for preparing food, a vapor extraction apparatus designed to extract vapors from the cooking compartment, and a catalyst fluidically coupled to the vapor extraction apparatus and designed to convert catalytically the vapors extracted in the vapor extraction apparatus. The catalyst includes a carrier and a layer of catalyst material applied on the carrier. In a normal mode of the oven for preparing food to be cooked, the catalyst has a concentration of acetic acid in the converted vapors which concentration of acetic acid amounts to less than or equal to 5 ppm. The oven is also able to operate in a pyrolysis mode which differs from the normal mode.

Ventless hood for cooking unit

A cooking unit includes a cooktop, a hood assembly, a duct assembly, and a fan. The cooktop defines a slot at least partially extending along a peripheral edge of the cooktop. The hood assembly includes a hood support extending upward from the cooktop and a hood coupled to the hood support. The hood support defines a conduit. The hood defines an intake and a hood chamber connecting the intake to the conduit of the hood support. The duct assembly includes ducting extending beneath the cooktop. The ducting connects the conduit to the slot. The fan is positioned to drive air into the intake, through the hood chamber, through the conduit, through the ducting, and out of the slot. At least a portion of the air exiting the slot returns to the intake such that an air curtain is generated between the slot and the intake.

The application relates according to one embodiment to an air filter for grease filtering. The filter includes a filter mounting element for installing the filter in connection with an intake opening of an air ventilation duct, at least one mechanical separation element for separating solid impurities from flowing air, and a UV source mounting element capable of being fitted with a UV source for generating UV light. The UV light and a catalyst coating present inside the filter are adapted to transform the physical state of grease flowing into the ventilation duct along with the airflow.

A commercial cooking equipment exhaust hood system includes a hood structure including an inlet opening to an exhaust flow path through the hood. A filter unit is positioned along the exhaust flow path. An electrostatic precipitator unit is downstream of the filter unit. The electrostatic precipitator includes an ionizing section upstream of a collecting section. The ionizing section includes a plurality of ionizing flow paths having side profile patterns that vary in width between at least one wide section and at least one narrow section. The collecting section includes a plurality of collecting flow paths with side profile patterns of substantially uniform width and a repeating undulating side profile pattern. A UV light source may also be provided within the hood, with a controller operatively connected to control the UV light source via a dimmer to enable selective production various UV levels.

Examples are disclosed that relate to recirculating ventilation systems for cooking appliances. One example provides a cooking appliance ventilation system, comprising a ventilation duct comprising an inlet aperture configured to receive cooking exhaust, a fan configured to pull the cooking exhaust through the inlet aperture and the ventilation duct, an ozone source configured to introduce ozone into the ventilation duct; and one more ozone mitigation components positioned within the ventilation duct downstream of the ozone source.

Air treatment method

A built-in apparatus and method for treating air including a housing with an air inlet and an air outlet. An air mover positioned near the air outlet is configured to draw the air through the air inlet. The housing encloses an air treatment zone, such as including an oxidizing zone, and an ozone removal zone positioned downstream of the air treatment zone and oxidizing zone. The air treatment zone includes UV light and/or ozone that partially oxidizes the chemical contaminants in the air treatment zone. A catalyst in the oxidizing zone oxidizes elements within the air treatment zone. The ozone removal zone includes a second, different catalyst material. A UV bulb that may or may not generate ozone is positioned within or downstream of the first and/or second catalyst materials to assist catalyst oxidation and/or self-clean the apparatus.
