A method and a device for measuring an oxygen content of a headspace gas in a beverage can. The beverage can is oriented upside down to allow the headspace gas to collect at the bottom. A hollow piercer on a piercing head forms a sampling opening in the bottom of the can through which the sampling tube penetrates. The liquid level in the beverage can is lowered to establish a direct connection of the gas-filled headspace and the sampling opening. Then the headspace gas is transported from the headspace to a sensor unit via the sampling tube and/or the hollow piercer or the piercing head. The oxygen content and/or an oxygen partial pressure and/or a headspace volume of the headspace gas are determined by the sensor unit. The sampling opening is closed off airtight by sealing elements arranged on the piercer or the piercing head.

The present invention relates to a method for product identification comprising subjecting a sample to cyclic voltammetry, wherein the sample is subjected to a plurality of voltammetric cycles to obtain a data set for each cycle and wherein the data sets comprise data points; and comparing the data set for each cycle with a data set for a corresponding cycle of at least one known product to determine whether the sample is the known product. The present invention further relates to a method for determining a profile for a known product, which may be used in determining the identity of a sample.

The present invention provides a connector (18) for use in a beverage dispense system (1), the connector (18) defining a conduit for connecting a beverage line (2) to a beverage supply (4). The connector (18) comprises an electrical sensor (21) (e.g. a capacitive sensor) for measuring an electrical parameter of a beverage within the connector conduit. The electrical parameter and/or changes in the electrical parameter can be used to detect bubbles in the beverage and/or identify the type/brand of beverage.

Method for Quantitatively Detecting Acetaldehyde in Wine Samples Using Fluorescent Probes

Disclosed in the disclosure is a method for detecting acetaldehyde in wine samples using fluorescent probes, belonging to the field of wine quality control. The detection method of the disclosure is used for measuring acetaldehyde in wines based on fluorescent probes. Under the acidic condition of pH=2.0, the specific binding between the fluorescent probe and acetaldehyde is realized according to the principle of photoelectron induced transfer. The fluorescent probe has a good linear relationship with the concentration of acetaldehyde in a range of 0-200 mg/L, the limit of detection (LOD) is 3.6×10.sup.−8 mol/L, and the recovery rate of samples is 94.02-108.12%. The detection method has the advantages including low cost, wide linear range, high sensitivity, and being fast and accurate. The fluorescent probe is successfully applied to the detection and analysis of wine samples and samples in a beer fermentation process.
