A cutting machine for cutting a food product includes a housing and a blade cover removably mounted to the housing via at least two positive or non-positive fastening points. A circular blade is rotatably disposed in the housing such that the blade cover covers a surface of the circular blade. A carriage is movably mounted parallel to the circular blade and includes a carriage surface for holding the food product. Each of the fastening points are disposed beneath the carriage surface.

System for portioning foodstuff to user-specified shape

A system for cutting a three-dimensional portion from a foodstuff includes a conveyor for carrying a foodstuff to be portioned, a scanner located adjacent to the conveyor for scanning the foodstuff, a computer coupled to the scanner for receiving scan information to determine one or more cutting paths for the foodstuff, and a cutter for portioning the foodstuff according to the determined cutting path(s). The computer performs generally four steps: (i) receiving scan information from the scanner; (ii) building a three-dimensional map of the foodstuff based on the received scan information; (iii) fitting at least one desired shape, which is stored in the memory of the computer, onto the built three-dimensional map; and (iv) determining one or more cutting paths for portioning the foodstuff to produce one or more portioned foodstuffs corresponding to the at least one desired shape.

FOOD PRODUCT SLICING APPARATUS

A food product slicing apparatus includes a frame and upper and lower drive assemblies. The upper drive assembly includes a belt configured to engage an upper surface of a food product block to be sliced, a plate pivotally mounted to the frame, front and rear wheels supporting the upper belt, the front wheel rotatably mounted to the plate and a drive member engaged with the plate. When the drive member is engaged, the plate and the front roller pivot relative to the frame and to the rear wheel. The lower drive assembly includes a belt configured to engage a bottom surface of the food product block.

A food spiral cutting machine, suitable for cutting fruits or vegetables into a continuous spiral or julienne. The spiral cutting machine includes a base, a drive unit, a screw, a cutter assembly and a locking device; the drive unit comprises a motor, a gearbox and an open drive nut; the gearbox comprises a planetary gear reduction group and a pair of bevel gears, a first bevel gear connects to the output of the planetary gear set, and the first bevel gear drives a second bevel gear which is provided with a spline inside the gear center hole. The first bevel gear meshes with the second bevel gear at right angle. An open drive nut rests on the underside of the screw. A screw is provided with a slot along the screw axis. The spline of the second bevel gear keys with the slot of the screw. When the second bevel gear is driven by the motor via the planetary gear set and the first bevel gear, the spline in the second bevel gear turns the screw. As the open drive nut meshing with the screw is stationary, the screw rotation results in linear movement of the screw along the screw axis. The distal end of the screw is fitted with a spikey disk, where there is a center pin and circumferential spikes such that fruit or vegetable can be supported and butted against the cutter assembly. By the simultaneous rotation and linear movement of the screw, the required motion to spirally cut fruit or vegetable is realized.

INLINE SPIRALIZING FOOD PROCESSOR

The invention described herein is directed to an inline spiral cutting food processor that includes a motor that rotates an upper positioned disc with a blade assembly by means of a belt or gear assembly or mechanism. The entrance and exit chute are fixed and positioned in-line with the axis of rotation of the blade supporting disc member. The entrance chute is positioned above the cutting disc, and the exit opening (or chute) is below. During operation a food item is pushed down the entrance chute as the blade rotates and cuts it. Cut food falls down through the opening or exit chute into a storage container or jar. The food cutting assembly is configured to generate spiral or helical food from vegetables.

Slicer and method for its layout

In order to avoid a gap on both sides of a blade exit point, if an outer radius of a product caliber is smaller than an inner radius of a product opening in a cutting frame at this point, a contour of the cutting frame in this blade exit area is given a radius of curvature as small as the smallest product caliber to be expected.
