Coextrusion head, food processing machine and assembly method
A coextrusion head for a food processing machine includes a feed line section having an inner pipe for conducting in the production direction a food mass to be formed into a strand. An inlet end of the inner pipe is connectable to an outlet of a stuffing machine. A housing extends in the production direction from the feed line section and surrounding the inner pipe. A receiving chamber, formed between the inner pipe and the housing, for a casing material to be applied to the strand. The receiving chamber has a housing inlet for the casing material. The feed line section and the housing are integrally embodied and the coextrusion head further includes a die attachment that has a die opening shaped correspondingly to the inner pipe and that is connected to the housing. A food processing machine having a coextrusion head and a corresponding assembly method are disclosed.

The present invention relates to a clipping machine for producing sausage-shaped products by filling a flowable filling material into a tubular or bag-shaped packaging casing and closing said packaging casing by at least one closure means, the clipping machine comprises a filling tube, having a central axis and a filling outlet, for feeding said filling material in a feeding direction via said filling outlet into said packaging casing, a displacement device for gathering the filled packaging casing and for forming a plait-like portion thereto, at least substantially free from filling material and a clipping device for applying at least one closure means to said plait-like portion. The displacement device of the inventive clipping machine is arranged in a replacement assembly group, wherein the group is removably arrangeable at the clipping machine in an engagement position, in which the replacement assembly group is coupled to the clipping machine for production process.

The invention relates to a filling machine and a method for filling a pasty mass, in particular for the production of sausages, with a vane cell pump for conveying the paste mass, a vacuum pump for generating negative pressure in the vane cell pump, where the housing of the vane cell pump comprises an evacuation opening via which the vacuum pump can evacuate the vane cells. The evacuation opening is formed in the cover of the vane cell pump.
PROCESS AND APPARATUS FOR RAPID PREPARATION OF DRIED SAUSAGE
A process for manufacturing dry sausage. The process includes preparing a dry sausage meat mixture, stuffing the mixture into a casing or mould, fermenting the mixture, heat treating the mixture, cooling the mixture to a temperature sufficiently low to permit slicing, slicing the sausage, placing the sausage onto a conveyor, and passing the conveyor and sausage through a chamber. The process also includes introducing a supply of conditioned air into the chamber, the air having a relative humidity below about 60% and a temperature in the range of at least about 40 F. to 130 F., and introducing a supply of microwaves into the chamber. The air supply and microwaves are selected to reduce the moisture content of the meat to a predetermined moisture to protein ratio.

A separator is provided for separating portions from elongate casings stuffed with food mass, in particular for separating sausages from alginate casings stuffed with sausage meat. The separator includes two circulating conveyor members spaced apart from one another and drivable by at least one drive element, and at least one crimping member arranged on each conveyor member. It is proposed that the legs of a crimping portion of the crimping members are curved on their side facing an adjacently arranged second crimping member in operation, such that the stuffed casing is first constricted in a constriction region with displacement of the food mass and then severed, producing a desirable shape for the portions separated.
