Protein deamidase
A novel protein deamidase having an activity of directly acting on a side chain amide group of an asparagine residue in a protein to form a side chain carboxyl group and release ammonia, a microorganism that produces the same, a gene encoding the same, a method for producing the same, and use of the same are provided. A bacterium classified into the class Actinobacteria is cultured to generate protein deamidase, and the enzyme is collected from culture.
Enzymes and methods for cleaving N-glycans from glycoproteins
Provided herein are deglycosylating enzymes that remove a broad range of N-glycans from N-glycosylated proteins. Further provided are methods of recombinantly producing and expressing the deglycosylating enzymes. The presently described deglycosylating enzymes can be used to produce free glycans for characterization, and for prebiotic and immunostimulatory uses. In addition, the presently described deglycosylating enzymes can be used to produce deglycosylated proteins for characterization, to improve digestion, and to reduce immunogenicity.

Taste and flavor modulation by biotransformation in milk products
The present invention relates to a method for promoting natural tastes and flavors in milk-based products, to a method for manufacturing such milk products and to the products thus made or obtainable by the method.
Beta-hexosyl-transferases and uses thereof
This invention relates generally to the discovery of novel recombinant forms of -hexosyl-transferases (BHT) and uses thereof to produce galacto-oligosaccharides (GOS) or as food additives.

COMPOSITIONS OF MILK AND ENZYMES FOR ADULT NUTRITION
This invention provides a liquid nutritional composition comprising fresh whole milk and chymosin and optionally additional ingredients selected from lactase, lipases or esterases, prebiotics, and probiotics or a combination thereof. In an embodiment, a free-flowing dry powder composition of chymosin and optionally additional ingredients selected from lactase, lipases or esterases, prebiotics, and probiotics or a combination thereof is provided, that can be suspended in fresh milk. The inventive composition may allow fresh milk, which many adults have difficulty digesting, to be digested properly without ill effects and be a useful source of protein and saturated fats which are important macronutrients. The inventive compositions may be used by children over the age of 5 years, and for adults.
Dairy-based zero sugar food product and associated method
Methods of making a zero sugar dairy-based food product and a zero sugar dairy-based food product are provided. The dairy-based food product includes a protease, an acyl transferase, a lactase, a skim milk, at least one of an additional ingredient selected from a group consisting of a probiotic, an artificial flavoring, a natural flavoring, a cream, a vitamin, a pectin, an oil, and combinations thereof, and an amount of water. The dairy-based food product further includes a sugar content of between 0 wt % and 0.4 wt %.
