A cool coffee infusing apparatus is disclosed having a liquid container, a ground coffee container, and a base. The base includes a pump, controls therefore, and receptacles for the containers. The liquid container is filled with cool water and the ground coffee container is filled with ground coffee. The pump circulates the water through the grounds until a desired level of infusion is achieved and coffee beverage is created. The coffee beverage is collected in the liquids container for pouring or for storage for later use.

The extracted drip coffee may be compared with the learned reference acidity and the reference concentration and evaluated, and when the acidity and concentration of the drip coffee are matched with the reference acidity and the reference concentration, the drip coffee having the same acidity and concentration as the drip coffee may be extracted. Alternatively, when the acidity and concentration of the drip coffee are not matched with the reference acidity and the reference concentration, drip coffee having the same or/and similar acidity and concentration as or/and to the reference acidity and the reference concentration may be extracted by changing extraction conditions of the drip coffee through reinforcement learning.

In one embodiment, the coffee brewing process comprises: a brew chamber to hold a packed chamber of coffee grounds; and a pump to force a liquid under pressure through the packed chamber of coffee grounds over multiple brewing cycles to extract coffee flavor from the coffee grounds into the liquid using a temperature agnostic infusing brewing process, the liquid under pressure causing a pressure differential over tunnels within the coffee grounds and over the brew chamber when forced through the chamber each cycle of a plurality of cycles to cause extraction of the flavor into the liquid.

The disclosure relates to a brewing apparatus configured to carry out a submerged soluble brewing method. The apparatus consists of a holding volume into which a brewing soluble may be inserted, the brewing soluble being held in place during the brewing process by top and bottom filters. The holding volume is connected to a collection volume which captures the brewed solution as it exits the holding volume. Liquid flow into the holding volume is regulated by a processor-controlled valve or pump connected to a feed supply to produce the ideal extraction based on user inputs or preset instructions. Advantageously, the characteristics of the brew produced by the apparatus are not affected by the size of the respective volumes. Furthermore, use of the apparatus ensures that every part of the soluble is subjected to an equal or similar flow of liquid, ensuring high efficiency. Additionally, the submerged bed brewing method allows for a higher flow rate than traditional cold drip brewing, allowing for shorter brewing times.
