CONVEYOR OVEN APPARATUS AND METHOD

Conveyor ovens for cooking food according to various embodiments include variable speed fans to deliver air from a plenum into at least two lower cooking zones below a conveyor of the oven, and at least one variable speed fan to deliver air from the plenum into one or more upper cooking zones above the conveyor, wherein a controller operates the fans delivering air into the lower cooking zones independently of each other and independently of the other fan. The fans can be controlled so that air delivered to a bottom side of the conveyor has a speed that is different in the different lower cooking zones and/or is different than air delivered to the top side of the conveyor. In some cases, the speed of the fans is predetermined and set in accordance with the type of food to be cooked.

Conveyor ovens for cooking food product according to various embodiments include a tunnel having an entrance and an exit, a conveyor to move the food product through the tunnel, and a canopy at the entrance and/or at the exit of the tunnel. The canopy can include a top spaced above the conveyor, and a skirt extending downwardly toward the conveyor, wherein the top, skirt, and conveyor define a partially enclosed space through which food product carried by the conveyor passes. Some conveyors ovens have a first configuration in which a cooking chamber of the oven has a first length, and a second configuration in which the cooking chamber is extended to have a longer second length, wherein food product on the conveyor is cooked along the entire first length in the first configuration, and is cooked along the entire second length in the second configuration.

Food service equipment comprises a multiple-pass feeder conveyor and toaster which comprises an upper inclined food product infeed conveyor ramp for causing the food products to proceed in a first direction extending from the rear of the appliance toward the front of the appliance and onto the upper run of a first upper endless conveyor. The upper run of the first upper endless conveyor conveys the food products into a semi-circular return product feeder which causes the food products to be conveyed in a second opposite direction extending from the front of the appliance toward the rear of the appliance and into an entry space defined by means of the lower run of the first upper endless conveyor and the upper run of a second lower endless conveyor, the two conveyors being synchronized together. The pair of conveyors convey the food products between heated platens respectively associated with the two conveyors whereby the food products are cooked or toasted. Additional pairs of conveyors can also be incorporated within the system, in a vertically stacked array, so as to effectively increase the length of travel experienced by the multiple food products without increasing the footprint of the equipment. In addition, upper and lower heated platens are operatively associated with the first and second upper and lower endless conveyors, and the upper heated platen is movably mounted within the food service equipment so as to move upwardly and downwardly and thereby permit different food products, having different thickness dimensions, to be conveyed through the food service equipment.

A baking oven for producing baked, preferably edible products, includes at least one upper heating apparatus configured as a radiant heating apparatus and at least one lower heating apparatus configured as a radiant heating apparatus in each of which a fuel mixture containing primary air and a fuel is burnt. The upper heating apparatus is disposed in an upper baking area and above an upper transport level and is directed onto a back surface of an upper plate configuration for heating a baking mould from above. The lower heating apparatus is disposed in a lower baking area between the upper transport level and a lower transport level and is directed onto the back surface of a lower plate configuration for heating the baking mould from above.
