Process for producing instant noodles
A process for producing noodle strips in which a dough sheet is slit into noodle strips using a rotary slitting device comprising at least a pair of cutting blade rolls, scraping members and air flow supply means. The dough sheet is passed through the cutting blade rolls, to thereby slit the dough sheet into noodle strips; the noodle strips are peeled off from the cutting blade rolls using the scraping members, to thereby separate into upper and lower noodle strip bundles; and air flow is supplied to the slit noodle strips from the air flow supply means. There is provided a process capable of stably realizing generally straight noodle strips with no strong longitudinal waves even in a mass production line.

METHOD FOR FABRICATION OF DOUGH SHEETS AND SYSTEMS, APPARATUSES, AND PRODUCTS THEREOF
A method of manufacturing a dough sheet, comprising providing a batch of dough, introducing the batch of dough to a pair of rollers, processing the dough through the pair of rollers to produce the dough sheet, and outputting the dough sheet from the pair of rollers. The pair of rollers is configured to transform the dough into the dough sheet, wherein a surface of each of the rollers of the pair of rollers is a grooved surface having a plurality of predetermined grooves. The predetermined grooves can run in a same direction as a direction of rotation of the roller, and the grooved surface has a predetermined surface roughness formed by the predetermined grooves.

NOODLE BAND CUTTING APPARATUS
A noodle band cutting apparatus for cutting a noodle band having a predetermined thickness and a predetermined width with cutting devices comprises a moving mechanism and plural cutting devices. One cutting device is selected from the plural cutting devices. The selected one pair of the cutting devices is moved and fixed at a position to cut the noodle band within the moving mechanism.
METHODS, SYSTEMS, AND APPARATUS FOR INTERFACING WITH MIXER DEVICES
The presented apparatus relates generally to the ability to interface different devices and attachments to commercially available common-off-the-shelf (COTS) mixer devices. More particularly, the presented exemplary embodiment relates to methods, apparatus, and systems for the enablement of mating third-party products to the COTS mixing devices, utilizing the mixer as the drive source for the mated product. It will also provide for the transference of torque between the mixer and other third-party products.

Disclosed are a noodle cutter assembly and a dough extruder. The noodle cutter assembly includes: a rotary bracket including a first support arm and a second support arm opposite to each other, a bracket axis being arranged on a same side of the first support arm and the second support arm, the first support arm and the second support arm being both extended along a circumferential direction of the support axis, the rotary bracket being configured for sleeving an outer side of a noodle out-coming die and rotating relative to the noodle out-coming die; and a noodle cutter connected between the first arm and the second arm, and configured for sliding and abutting on outer edges of noodle out-coming holes.
Noodle cutter assembly and dough extruder
Disclosed are a noodle cutter assembly and a dough extruder. The noodle cutter assembly includes: a rotary bracket including a first support arm and a second support arm opposite to each other, a bracket axis being arranged on a same side of the first support arm and the second support arm, the first support arm and the second support arm being both extended along a circumferential direction of the support axis, the rotary bracket being configured for sleeving an outer side of a noodle out-coming die and rotating relative to the noodle out-coming die; and a noodle cutter connected between the first arm and the second arm, and configured for sliding and abutting on outer edges of noodle out-coming holes.
Cutter for cutting elongate foodstuffs
A cutter for cutting elongated foodstuff includes a frame, via which frame, the cutter is connected to a support surface or surfaces, and two cutting rollers connected to the frame in parallel in relation to each other at a distance apart. The cutting rollers include a plurality of circular cutting blades, and the cutter includes means for adjusting the distance between the cutting rollers by rotating the cutter or part of the cutter in relation to its support surface or surfaces. The means for adjusting the distance between cutting rollers includes a two-part frame, where the first roller is connected to the first frame part, and the second roller is connected to the second frame part. Further disclosed is an apparatus for producing elongated foodstuff equipped with such a cutter.
