SUPPORT TRAY FOR BAKERY, VIENNOISERIE, PATISSERIE AND SIMILAR PRODUCTS, MADE FROM AN EXPANDED METAL SHEET
The support tray device for transporting bakery, patisserie, viennoiserie or similar products through at least one processing unit of an installation used for producing such products includes a frame on which at least one sheet of metallic material is fixed. The sheet includes an expanded-metal sheet having micromeshes forming a metal lattice. The expanded-metal sheet is obtained by cutting and stretching a metal sheet. The micromeshes have passage openings between 130 and 750 μm. As a result of the micromeshes, the expanded metal sheet has a voids surface area representing between 17 and 60% of the total surface area of the sheet.
Device for baking dough-based food products, net and method for baking such products
A device includes a carriage and an oven including a baking chamber, a plurality of stacked baking soles and elements for heating the soles. The device includes a plurality of nets made of a heat-resistant flexible material and at least one cell for receiving the food products. The carriage is arranged for inserting the nets into the oven, for withdrawing same and for positioning same opposite a sole. The device includes elements for vertically moving the soles and/or the nets relative to each other to place the soles and nets in an active position in which the bottom of the cells of a net is in contact with the baking sole located opposite and is capable of deformation upon contact with the sole so as to bake the products by induction, and in a passive position, in which the bottom of the cells is separated from the sole located opposite.
METHOD AND APPARATUS FOR PROVIDING TOPPINGS ON OPPOSITE SIDES OF A BAKED FOOD ITEM
Improved techniques of preparing baked food items (e.g., pizza, flatbread sandwich) with cheese and or toppings on both sides of the item. A baking screen may have a non-stick surface and also have a plurality of air flow holes. The combination of the non-stick surface and the air flow holes help mitigate any potential problem of the cheese and or toppings on the bottom side of the item sticking to the cooking surface.
Device for Baking Dough-Based Food Products, Net and Method for Baking Such Products
The invention relates to a device that comprises a carriage and an oven including a baking chamber, a plurality of stacked baking soles and means for heating said soles. The device is characterized in that it includes a plurality of nets made of a heat-resistant flexible material and includes at least one cell for receiving said food products, in that the carriage is arranged for inserting said nets into the oven, for withdrawing same and for positioning same opposite a sole, and in that it includes means for vertically moving the soles and/or the nets relative to each other so as to place said soles and said nets in an active position in which the bottom of the cells of a net is in contact with the baking sole located opposite and is capable of deformation upon contact with said sole so as to bake said products by induction, and in a passive position, in which the bottom of said cells is separated from the sole located opposite.
TRAY FOR COOKING FOOD AND PROCESS FOR MANUFACTURING A TRAY
The present invention relates to a tray (10) for cooking food in an oven or a microwave oven. The tray (10) comprises a flat, non-flexible base plate (12) and at least one side wall (14) surrounding the base plate (12), whereby the base plate (12) and the at least one side wall (14) are integrally formed. The base plate (12) and the at least one side wall (14) have a lattice structure comprising a plurality of webs (16) and a plurality of openings (18) introduced by means of a laser and/or by punching out. The tray (10) further comprises guiding means (22) attached to the base plate (12) and/or the at least one side wall (14). At least 45% of a surface formed by the base plate (12) and the at least one side wall (14) is formed by the plurality of openings (18). Further the present invention relates to a process for manufacturing such a tray (10) whereby a plate is provided, the plurality of openings (18) are introduced into the plate by means of a laser and/or by punching out, an edge of the plate is deformed to form the at least one side wall (14) and the base plate (12) and the guiding means (22) are attached to the base plate (12) and/or the at least one side wall (14).
BAKING APPARATUS
A baking apparatus has a substantially rectangular baking basket for holding one or more food items supported by a substantially rectangular tray. The tray has a base and a container wall extending upward therefrom and forming an upper lip. The basket has a mesh cradle portion defining a plurality of openings. The mesh cradle portion has a bottom surface and cradle wall extending upwards from the bottom surface and forming, at an upper end, an upper periphery. A solid and continuous support rim is coupled to the upper periphery. Handles extend off the support rim. A series of support members extend from the support rim and hold the basket in a position elevated from the tray. The tray captures discharges from the one or more food items and prevents warping. The tray and basket allow air to circulate substantially freely around the one or more food items.

A baking tray that includes a supportive frame having a left portion, a right portion, a front portion, and a rear portion, wherein the front portion includes a front crossbar and wherein the rear portion includes a rear crossbar; and a detachable baking insert adapted to be releasably mounted on the supportive frame that includes a left portion, a right portion, a front portion having an outermost edge, and a rear portion having an outermost edge, wherein the outermost edge of the front portion of the detachable baking insert includes at least one foldable tab formed thereon for releasably engaging the front crossbar, and wherein the outermost edge of the rear portion of the detachable baking insert includes at least one foldable tab formed thereon for releasably engaging the rear crossbar.
