Rolled food products are produced by cutting a dough sheet to form a roll sheet having a continuous pattern. The pattern is comprised of an asymmetrical repeat unit. The roll sheet is transported in a first direction with a conveyor system, and the roll sheet is rolled in a second direction to form a continuous roll. The second direction is not parallel to the first direction. The continuous roll is cut to form a plurality of rolls. Each of the plurality of rolls is asymmetrical.

A gap between the supporting member and a lower surface of the rotary disk in the step region is defined so that the solid object can move a space below the guide member from the upstream side to the downstream side. The gap is larger than a gap between the supporting member and the lower surface of the rotary disk in the other region.

An apparatus and method for post-extrusion filling and closing of an extrudate includes a feeder arranged in relation to an extruded rope of material flowing from an extrusion die of an extruder, wherein the rope of material has an opening that can receive a filler material. The feeder deposits the filler material into the opening of the rope of material as the rope of material flows by the feeder. A former receives the rope of material after the feeder has deposited the filler material into the opening of the rope. The former shapes the rope of material and close a portion or all of the rope around at least a portion of the deposited filler material to retain the filler material within the rope. A cutter may axially cut the rope to form the opening. A finisher may cut the shaped rope into portions containing the deposited filler material.

A crimping and cutting assembly includes a first roller engaged with a second roller including a honeycomb pattern of polygonal crimping and cutting members. Various transversely spaced, internally filled dough ropes are fed between the first and second rollers, causing each rope to be continuously crimped and cut at longitudinally spaced locations to create multi-sided food products, specifically polygonal food products having two to six crimped and cut sides. The ropes can permissibly shift or wander laterally during production, resulting in slightly different size or shape food products, while the honeycomb pattern acts to re-align the ropes so as to be tolerant to the ropes wandering while still preventing puncturing of the ropes which could lead to loss of filling and extended production downtime.

Filled roll dough products, such as pizza rolls, are made with an outer dough shell with an internal filling material. Versus a conventional pizza roll, pizza rolls in accordance with the invention employs a filling material having a lower viscosity upon heating due to the removal of a majority of a viscosity altering additive (e.g., methyl cellulose) used in a conventional filling and an outer dough shell formed with spaced internal ridges which increase the structural integrity of the outer shell while not at all changing the external appearance. While removal of the viscosity altering additive from the filling material increases a blow-out rate for the product, the inclusion of the ridges decreases the blow-out rate to the extent that either a reduction or no significant change in product blow-rates is produced.

The casing and the inclined auger together form the extrusion forming mechanism which produces a continuous tubular wrapper through a gap. An inner cavity of the inclined auger and the vertical auger together form the feeding mechanism which fills the stuffing into the wrapper. The first pressing edge and the second pressing edge together form the pressing-breaking mechanism which is configured to seal and break food edges. The extrusion forming mechanism and the feeding mechanism can be integrated due to a suitable conical structure. The casing, as well as an external profile and an inner cavity of the inclined auger have an inverted cone shape.
