A system and method for removing a bone from a primal or sub primal meat cut that includes a conveyance system having a continuous conveyor extending along a path of conveyance from an upstream point at the loading end to a downstream point at the discharge. The system includes a pair of opposing support surfaces projecting vertically upward from a first position of the continuous conveyor along the path of conveyance whereby each of the opposing support surfaces of the pair inwardly extend one toward the other, from an upper level downward vertically to a lower level. Each opposing support surface of the pair has a downward slope and each opposing surface of the pair converges at a recessed valley at the lower level.
A MEAT PROCESSING SYSTEM
A meat processing system comprising a blade, a blade movement assembly, a controller and a conveyor. The blade is configured to cut a carcass into pieces and lies substantially in a blade plane. The conveyor is configured to move the carcass along a first axis. The controller is configured to control the blade movement assembly to rotate the blade or a portion of the blade to vary an angle between the blade plane and the first axis. The blade movement assembly may also be configured to translate the blade to move the blade transverse to the first axis. A method of operating a meat processing system is also disclosed. The method includes conveying a carcass or section of carcass along a first axis, controlling a blade movement assembly to rotate a blade or a portion of a blade to vary the angle between a blade plane and the first axis, and cutting the carcass or section of carcass into pieces.
A CUTTING SYSTEM FOR CUTTING CARCASS PARTS WHILE THE CARCASS PARTS ARE CARRIED BY CARRIERS CONNECTED TO AND MOVED BY AN OVERHANG TRANSPORT SYSTEM
A cutting system is provided for cutting carcass parts while the carcass parts are carried by carriers connected to and moved by an overhang transport system. A detection device is provided for determining a cutting position of an incoming carcass part. At least one cutting device having an upwardly and downwardly facing surface structure is provided and a moving mechanism is mechanically connected to the at least one cutting device for controlling the position of the at least one cutting device on the basis of the determined cutting position. A carcass displacement device is arranged to initiate displacement of the carcass part away from the at least one cutting position while the carcass part or a resulting sub-part carried by a carrier and is located between the upstream cutting edge and the downstream edge.
Cutting fore end from hanging half pig carcass
A system and a method for separating a fore end of a half pig carcass by making a first cut between ribs three and four up to the shoulder blade followed by a second cut through the rest of the carcass. The first cut is made using a regular knife blade, the second cut is made using a scissor blade.
Method and device for processing carcasses of livestock along the spine
A method for processing carcasses of livestock, includes the processing steps of: positioning a hanging livestock carcass; making an incision along the spine of the positioned hanging livestock carcass; loosening the meat from opposite sides of the feather bones of the spine; and splitting the spine of the carcass. A device for processing carcasses of livestock is arranged for enabling the process steps.
A BUNG DRILLER WITH A BUNG HOLDER
A bung driller is provided for cutting free the anal opening and rectum end of an animal carcass by cutting around the anal opening and rectum end. The bung driller includes a longitudinal, drilling tube with an open cutting end, a mandrel centralized inside the drilling tube, and a bung holder located inside of the drilling tube and surrounding the mandrel. Contamination of skin surface and meat surface by fecal matter is a problem when cutting free the anal opening and rectum end of a carcass. The bung holder located inside of the drilling tube provides a holding force to the skin surface around the anal opening and makes a volume wherein fecal matter escaping from the intestine is caught.

METHOD AND PLANT FOR INSPECTING AN ANIMAL CARCASS
An animal carcass is moved along a movement trajectory which passes through an inspection zone between at least one X-ray emitter and at least one X-ray detector, which are stationary relative to the inspection zone. X-ray detections are performed at successive moments during movement of the animal carcass through the inspection zone, the animal carcass being made to rotate around an axis of rotation which is transversal to lines of propagation of X-rays emitted by the at least one X-ray emitter in the inspection zone, so that what is obtained is a plurality of two-dimensional radiographic images of the animal carcass in different angular positions around the axis of rotation . The two-dimensional radiographic images are processed to determine a cutting pattern and/or a structure of the animal carcass, such as a position of bones, fat and/or lean parts in the animal carcass.
A METHOD AND AN APPARATUS FOR PROCESSING A HALF PIG CARCASS PART HANGING FROM A CARRIER
A system and a method for separating a middle portion of a half pig carcass, hanging from an overhead conveyor in a carrier, by cutting between the hip bone and the chine bone (backbone) and optionally between the tail bone and the hip bone, the cut causing a middle portion of the half pig carcass part to be partly separated from the remaining half pig carcass part via gravity. Further cutting the connection between the middle part of the half pig carcass part along a curve along the muscle defining the ham cut to separate the middle portion from the rest of the half pig carcass part causing the ham part of the half pig carcass part to remain hanging in the carrier.
