METHODS FOR PRODUCTION OF ANIMAL-FREE HONEY AND MILK SUBSTITUTES
20230227882 · 2023-07-20 · ·

Royal jelly honey produced by nurse bees, honey and milk has great values in human health and/or beauty. This invention aims to produce royal jelly honey substitute, honey substitute, animal free milk without the need for bees or cows or goats. First, recombinant major royal jelly proteins (MRJPs), defensin-1, and milk proteins are produced by microbes (such as bacteria, yeasts, or fungi) using precision fermentation. The MRJPs, defensin-1 or milk proteins are then formulated with vitamins, water, minerals, fats, salt and/or amino acids to produce a bee-free royal jelly honey substitute, bee-free honey substitute or animal free milk. MRJPs can also be formulated with vitamins, water, minerals, fats, salt, amino acids and recombinant milk proteins to produce animal-free milk or milk substitutes with supplemental MRJPs. Plant-based milks can also be supplemented with MRJPs and recombinant milk proteins.

STANDARDIZED HONEY

A new means of creating a standardized honey that can be used for a variety of uses. One example is a honey product that protects the stomach and inhibits H. pylori. This product has a consistent minimal antimicrobial effect. The honey may be standardized to pH, organic acid level, mineral levels, aldehyde levels, and polyphenol levels. Molasses or natural syrup may be substituted for honey. Other variations are honey that is supplemented with molasses, natural syrup, standardized molasses and/or standardized natural syrup.

Honey Infused with Pollen

The comprehensive result of the present invention contains raw honey, bee pollen, and/or manually collected pollen. The pollens are frozen to prevent spoilage. Upon collecting all of the desired pollens, the pollens are mixed together and thoroughly blended with raw honey to create a product, with extended shelf life, containing a known variety of pollens.

ARTIFICIAL HONEY COMPOSITION AND PRODUCTION PROCESS

The present invention relates to a production process, composition and use of an artificial honey based on the use of inverted sugar, preferably using the enzyme invertase from yeast, with the addition of nutritive components such that the final syrup has a formulation similar to that of natural honey and can have improved pharmaceutical functions and biological functions, being healthier. The artificial honey of the present invention relates to a product of strictly plant origin, which is produced without the use of animal work or biological materials, and can be commercialized in various sectors, including the vegan sector. More specifically, the artificial honey of the present invention is produced from inverted sucrose, preferably by means of the enzymatic catalysis of VHP/VVHP/demerara brown sugars rich in minerals, vitamins and natural antioxidants of great pharmacological interest and various types of substances of interest. The artificial honey of the present invention has no chemical substances that are harmful to human health (e.g. pigments, preservatives or other chemical additives) added to it or produced in it, but can be flavored and/or aromatized with artificial honey flavoring, flavoring identical to natural honey and, optionally, natural honey flavoring, and may also contain fiber, vitamin supplements, minerals, vitamins, amino acids, natural extracts, being optionally directly consumed or used for manufacturing other food products.

BEE-LESS HONEY

Systems comprising a first polynucleotide comprising a regulatory element operatively linked to an open reading frame encoding an invertase enzyme and a second polynucleotide comprising a repressible regulatory element operatively linked to an open reading frame encoding a glucose oxidase enzyme wherein the repressible element inhibits transcription in response to hydrogen peroxide are provided. Cells and compositions comprising a system of the invention, as well as methods using the system of the invention, are also provided, as is artificial honey.
